Try this healthier approach to brownies by Lauren Popeck, a registered dietitian at Orlando Health, for those days where your chocolate craving just won't quit!
Chocolate-Cherry Fudge Brownies
Ingredients:
12 ounces dark chocolate chips
3 tablespoons unrefined coconut oil + more for greasing pan
1 can black beans
3 flax eggs (see directions below)
1/2 cup real maple syrup
1/2 cup rolled oats
2 teaspoons baking powder
1/2 cup pecans, finely chopped (optional)
1/4 cup dried cherries (optional)
(Yield: 12 Brownies)
Process:
1. Preheat oven to 350°F. Line the bottom of a 9×9 inch pan with parchment paper and then grease the entire pan with coconut oil.
2. Melt the chocolate and coconut oil by placing them in a glass bowl on top of a simmering pot of water. Stir occasionally until melted and combined.
3. Transfer the melted chocolate mixture to a blender or food processor. Add all the remaining ingredients except for the cherries and pecans and blend until smooth. Stir in the pecans and cherries. Pour the batter into the prepared pan.
4. Bake for 50 minutes, or until a toothpick inserted into the middle of the dish comes out mostly clean.
(To Create Flax Egg: whisk together 1 Tbsp ground flax seeds with 3 Tbsp lukewarm water for each “egg” needed. Allow to sit for 5 minutes before using in the recipe.)
