Cocobel Chocolate is collecting donations for disaster relief. Boats will be headed up the islands later this week.

Basic Necessities

1. Water: Clean drinking water, water purification tablets, and portable water filters.
2. Food: Non-perishable food items such as canned goods, dry grains, and high-energy snacks.
3. Shelter: Tents, tarps, and plastic sheeting for temporary housing.
4. Clothing: Warm clothing, blankets, and sleeping bags.

Medical Supplies

1. First Aid Kits: Bandages, antiseptics, gauze, and medical tape.
2. Medications: Essential medicines, including antibiotics, pain relievers, and medications for chronic conditions.
3. Sanitation: Portable toilets, hand sanitizers, and hygiene kits (soap, toothbrushes, toothpaste, etc.).

Tools and Equipment

1. Generators: Portable generators and fuel to provide temporary power.
2. Lighting: Solar-powered or battery-operated lanterns and flashlights.

May is the time we celebrate the love and care our moms have given us over the years. I have to say it has been a privilege and an honour to share my womb with my three children.. 🤣 had to throw that in there! I usually create my chocolate bon bons and truffles during this spring time influenced by memories of my own mother and the amazing blossoms emerging everywhere in and around these mountains. The many different colours especially yellow will always be a part of the Chocolate Midge gifts options. 5PK BON BON BOX - The Yellow Rose is truly a painful mould to work with but I so enjoy the outcome and three of my favourite flavours, Passionfruit, Mango & Coconut blend to create a palate pleasing bon bon. Spiced Rum Truffle is just….well what can I say.. pure enjoyment. Green Tea Hibiscus takes you to a zen garden, Hazelnut Gianduja brings out the best in this fabulous nut and Pistachio Rose is reminiscent of tea time with vintage china.

First of all I’m not looking to impress with by chocolate dissecting skills… she’s a beauty but I have to admit a wild child birthed out of a complete mess up🤣 as per my usual creations! My goal is to make those lines a little more defined but my Lord the flavour is perfection. Matcha Hibiscus Bon Bon is layered with Almond Praline, Vanilla Chai Ganache and Hibiscus Coulis all snugly set in a Matcha White Chocolate. Nutty, creamy and tart 😃popped three before I could control myself!

I don’t usually stock things as I haven’t reached to that production level but this one will be one for the future. Working with Almond Praline filled eggs and as with the dark rustic egg its Puerto Rican 72% shell is embedded with natural roasted almonds and a touch of sea salt. The pink hue of the other egg is Raspberry White Chocolate. All Vegan goodness!! This was so much fun to put together and learned what not to do next time🤣🤣

I remember this moment as if it were yesterday. We were raising Simbrah cattle and it was birthing season. It was quite rainy and fog lay low on the pasture a perfect environment for predators to sneak up on new borns. We made it a habit to check the mamas frequently around this time. We watched as this first time mom gave birth after a few hours of labour. Something struck me as being fascinating and had to capture this moment on my camera. The cows in the pasture gathered around her till she gave birth and did not bother her but looked on just close enough without interfering. The calf was still attached to its mother by the umbilical cord but she was exhausted and could not get up for a while but the other moms kept vigil till she recovered. It was beautiful .. and how wonderful it is in society when we have that healthy support system in challenging and uncertain times.

A play day in the chocolate lab.. science of food and how things of such great contrast can look and taste quite in sync with each other. Grandma’s rose garden a happy and safe memory of innocence and the bright colours of pistachio and its exotic sweet flavor and of course dark chocolate (Origin Puerto Rico) brings it all together.. it’s my take and my instagram page so therefore my musings 🤣 Inside these morsels made for royalty is Pistachio Gianduja made with Chocolate Midge vegan white chocolate and gently kissed with Celtic sea salt. Organic rose petals and crushed pistachios just tell the story you’re about to experience.

Blood Orange season .. 🥰 receiving my boxes of beautiful unsprayed and unwaxed goodness is a foreshadowing into hours and days of slicing and dehydrating. Everything is used, there is no waste and that makes me happy. Chocolate Midge’s Blood Orange Hazelnut and Coffee Bark took on a new form and added ingredient this year. Afternoon Delight Bites with the toasty goodness crunch of Quinoa. Tumaco Columbia is the foundation of my coffee chocolate with its intense flavour notes and perfect combination with roasted hazelnuts.
