“It’s like spaghettios, but the grown up healthy version” -my husband.
My daughter told me a similar recipe so I made up my own! It’s a great way to get in fresh turmeric! Make sure to add the pepper so turneric can get in effectively! Sorry, no accurate measurements, I just eye balled.
4-5 carrots
3 celery stalks
2 large sweet onions
5 garlic cloves
Broth of choice(enough to sligtly cover veggies)
1 root piece of turmeric peeled
Salt and pepper to taste
I simmered on low for about an hour while I was out working with chickens. Remove solids with a little of the broth and blend in blender. Then cook orzo into your broth until tender then add the blended soup back in. Top with fresh green onions! So yummy!
