We celebrate June 5 as this is the birthdate of Chiropractic' First Lady.

Mabel Heath Palmer, D.C., FPAC is much heralded in the chiropractic field. She was a leader and inspiration to female chiropractors, successfully combining her role as wife and mother with teaching at Palmer for more than four decades.She became a Doctor of Chiropractic in 1905.
She paved the path for countless other notable women in Chiropractic both in the early days and through the years up until today.
Today about 50% of Doctors of Chiropractic are women, helping millions of people improve their lives. 👌👌

Busy schedules?? Sports, work, kids !! 🙃😬🤣🤪
I knew this week was going to be CRAZY, so I used a mealplan from Well Nourished https://wellnourished.com.au/ref/100/ for the week. My favourite place for recipes. ❤️
Today included volunteering at school, one parent working late and baseball training, so dinner had to be easy, filling and able to be eaten at 3 different times.

This is a healthy take on a Greek lasagna classic, Pastitsio. Instead of a cheesy béchamel sauce, it’s topped with a much lighter blend of yoghurt, tahini and parmesan cheese. It can also be made with beef mince (ground beef). This dish is a Mediterranean-inspired comfort food, perfect for family meals or gatherings, combining warming spices and wholesome ingredients.

Health benefits
With protein-rich beef, nutrient-dense veggies, and Greek yoghurt, Pastitsio provides iron, fibre, calcium and essential vitamins. The use of olive oil and spinach further enhances its healthy and anti-inflammatory benefits.

These are a favourite at kids parties in Australia.
Super simple and delicious, not particularly healthy. 🤷‍♀️
Perfect afternoon snack on this snowy afternoon.

Honey Joy's.

Melt together
90g ( 3oz) butter
1/3 cup sugar
1 tablespoon Honey.
Until foamy.

Pour over 4 cups cornflakes and mix well to coat all the cornflakes.
Spoon into lined cupcake trays. Give them a gentle squish so they stick together when set.
