They are a great way to get your Mexican food fix anytime of the day! Perfect for any phase.
INGREDIENTS:
2 small packages mini peppers
1 pound 90% lean ground beef or whatever ground meat you want.
1/2 tsp. garlic powder
1 tsp. ground cumin
1 tbs. chili powder
1/2- 1 cup salsa (make it yourself or buy something without bad ingredients or added sugar)
pinch pink salt
2 tbs. chopped fresh cilantro
INSTRUCTIONS
Preheat the oven to 400F.
Slice the peppers length wise, then remove the stem and seeds. Place on a baking sheet that has been lined with foil or parchment paper for easy clean up.
Place peppers in the oven for 12 minutes.
Place a large skillet over medium heat. Once hot, add ground meat and allow to cook through, breaking up the meat into small pieces.
Cook about 7 minutes, until no longer pink.
Add the garlic powder, cumin, chili powder, organic salsa and pinch of salt. Allow to cool slightly while waiting on peppers to finish.
Stuff the peppers with a small spoon once they come out of the oven. Sprinkle with chopped fresh cilantro.
Add your favorite toppings. Serve hot or at room temperature.
🍗 SWEET & SPICEY CHICKEN FINGERS 🍗
They have the right amount of spice. They’re quick and easy to make, and your whole family will love them! Perfect for maintenance and beyond.
INGREDIENTS:
1 1/2 cups almond flour (almond meal)
½ teaspoon pink salt
¼ teaspoon fresh cracked pepper
2 eggs
1 lb chicken tenders
1//4 cup honey
⅓ cup hot sauce (Franks or Tapatio work great)
½ teaspoon garlic powder
INSTRUCTIONS
Preheat the oven to 425 degrees. Line a rimmed baking sheet with parchment paper. Trim any overhanging edges of the parchment paper.
Place the almond flour, pink salt, and fresh cracked pepper into a bowl and stir it together. Place the eggs in another bowl with a splash of water and whisk them.
Dip the chicken into the egg then into the almond flour.
Lay the chicken tenders on the prepared baking sheet. Bake the chicken for 25 minutes, or until it is crispy and beginning to golden brown.
*OPTIONAL STEP Let the chicken rest for 30-60 minutes in your fridge before you bake it. This step will help the crust to stick to the chicken. I’ve done it both ways. Either way is delicious.
