💚It's Zucchini season!💚
Try out this high-protein zucchini recipe this week.

INGREDIENTS
✅ 3 cups cooked, shredded chicken breast
✅ 2½ cups spaghetti or marinara sauce or homemade tomato sauce divided
✅ 3 medium zucchini sliced lengthwise ⅛-inch thick (I used a mandoline to make the zucchini slices.)
✅ 1½ cups shredded mozzarella divided

INSTRUCTIONS
1️⃣ Preheat oven to 375°F.
2️⃣ In a medium bowl, mix the shredded cooked chicken and 1½ cups of tomato sauce. Stir well.
3️⃣ In a casserole dish, spread a ½ cup of tomato sauce on the bottom.
4️⃣ Place a piece of wax paper, aluminum foil, or a clean cutting board on the counter, and lay out the zucchini slices. Spread about 3 tablespoons of the chicken mixture over each zucchini slice. Then, sprinkle some mozzarella cheese. Save a ½ cup of mozzarella cheese to top the zucchini noodles when you place them in the prepared casserole.
5️⃣ Carefully roll them up and place them tightly in the prepared casserole dish.
6️⃣ Top the zucchini rolls with the remaining ½ cup of tomato sauce, and sprinkle with the remaining ½ cup of mozzarella cheese.
7️⃣ Bake covered with foil for approximately 30 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is melted. Enjoy!

🌟Meet Phoenix Berglund, our new exercise specialist!🌟

Phoenix’s passion for health and fitness began at a young age, around 14. She played volleyball throughout high school, and started applying herself consistently to resistance training. By the time she was 17, she began working as a fitness associate at a CrossFit gym. After taking a class, Weightlifting 101, she was able to assist the coaches with group classes. From there, she went on to become HIT certified, working at a Super-Slow gym for over 3 years. This not only taught her the science behind resistance training, but also the importance of working around injuries. She learned that less can be more in so many ways. Since then, she has continued to build her foundation on strength and performance, earning her NASM certified personal trainer credential. This helped reinforce her knowledge in exercise science, movement correction, and injury prevention.

Phoenix has always loved hiking, biking, swimming, horseback riding, and anything outdoors! She loves helping others and is looking forward to meeting and training with you!

🌿🥗 Healthy Greek Salad Cottage Cheese Bowls 🥗🌿

Looking for a refreshing and nutritious meal idea? Try this Healthy Greek Salad Cottage Cheese Bowl! 🍅🥒 This vibrant dish combines the tangy flavors of traditional Greek salad with the creamy goodness of cottage cheese, offering a protein-packed meal that's perfect for lunch or a light dinner. 🧀✨

Serves 4;
386 Calories & 27g of Protein per bowl!

Ingredients
▢ 4 large eggs
▢ 2 Persian cucumbers, halved, cut into 1/2" pieces
▢ 1 medium orange or yellow bell pepper, cut into 1/2" pieces
▢ 1 cup halved cherry tomatoes
▢ 1/4 cup sliced pitted Kalamata olives
▢ 3 Tbsp extra-virgin olive oil
▢ 2 Tbsp capers, drained
▢ 2 Tbsp fresh lemon juice
▢1 tsp za'atar, plus more for serving (optional)
▢ Salt & Pepper
▢ 1/3 cup fresh mint and/or parsley leaves, torn if large
▢ 3 cups low-fat cottage cheese
▢ Whole grain pita chips, for serving (optional)

INSTRUCTIONS
1. In a small pot, cover eggs with 2" water. Bring to a simmer, then cover pot and remove from heat. Let sit 8 minutes. Drain eggs and immediately transfer to a bowl of ice water. Let cool until cold to the touch, about 3 minutes. Peel and halve lengthwise; set aside.
2. In a medium bowl, toss cucumbers, bell pepper, tomatoes, olives, oil, capers, lemon juice, and za’atar (if using); season with salt and pepper. Stir in mint.
3. Divide cottage cheese among bowls. Top with tomato salad and reserved eggs. Sprinkle with more za’atar (if using). Serve with pita chips alongside.
