šŸ„’āœØ Celebrate National Wellness Month with Every Bite

Yellow squash is flourishing in our North Idaho gardens—and what better way to savor the season than with this vibrant, veggie-packed dish? Lightly sautĆ©ed with fresh basil, juicy tomatoes, garlic, and a sprinkle of Parmesan, it’s a nourishing side that pairs perfectly with grilled protein and good intentions. Let food fuel your transformation—one golden bite at a time. 🌿

šŸ³ SautĆ©ed Yellow Squash with Tomato, Basil & Parmesan

Ingredients:
2 tablespoons olive oil
2 tablespoons of butter
1 yellow onion, thinly sliced
2 garlic cloves, minced
2 medium yellow squash, sliced into rounds
1 cup cherry tomatoes (or chopped regular tomatoes)
Salt and pepper to taste
¼ cup fresh basil, chopped
¼ cup grated Parmesan cheese

Instructions:
1. Heat the olive oil and butter in a large skillet over medium heat.
2. SautĆ© the onion for 2–3 minutes until it starts to soften.
3. Add the garlic and cook for another minute until fragrant.
4. Toss in the yellow squash and cook for 5–7 minutes, stirring occasionally, until tender but still slightly crisp.
5. Stir in the tomatoes, season with salt and pepper, and cook for 2–3 more minutes until the tomatoes are just warmed through.
6. Remove from heat and fold in the fresh basil.
