Blueberry muffins are always a favorite in our house, and I love that this version packs in protein without changing the flavor we all love!! Pair a couple mini muffins w fruit and call it a balanced breakfast on busy mornings, bc 2 minis are 6g of protein 🙂↔️
Literally just 1 1/2 c pancake mix, 1 c cottage cheese, 2 eggs, 1/4 c milk, & 1/2 c bluebs! Bake at 350F for about 15-20 min
