Satay Baked Tofu with Thai Unripe Mango Salad

SO MUCH FLAVOUR! I absolutely love this dressing I could drink it! Make sure you mix this really well so it covers everything and isn’t sitting at the bottom! Also make sure you get a hard, raw mango as you need it to be a cucumberish texture rather than normal soft mango. You could easily do this with chicken if you prefer over tofu, would be delicious! It looks like there is a lot to do here but it’s all quite straight forward and not hard at all. Happy Cooking Everyone ♥️

Tofu & Marinade:
560g tofu
2 tbsp oil
2 tbsp peanut butter
2 tbsp soy sauce
1 lemon
1 tbsp water

Salad:
1 unripe mango
1/2 cucumber
200g green beans
15 cherry tomatoes
1 red chilli
Handful mint
2 tbsp roasted peanuts

Dressing:
2 limes
1 tbsp fish sauce
1 tsp crushed ginger
1 tsp tamarind sauce

Pre heat oven to 180 degrees C.

Chop tofu into large steak like pieces. Drizzle olive oil onto small oven tray and place tofu on top.

Mix peanut butter, soy, lemon juice and water until combined then spoon on top of the tofu and smooth out getting as much of the sides as you can. Bake in the oven for 20 mins.

Chop cucumber into angles chunks, then in half again. Chop green beans into 3 pieces, tomatoes in half, slice chilli and dice mint, add all to a salad bowl. Keep some mint aside for garnish.

Slice skin off the mango then using a julienne peeler, peel the mango. If you don’t have a julienne peeler then use a normal peeler instead. Add to the salad.

Mix all ingredients in the dressing list and pour onto the salad.

Place tofu on top of the salad, sprinkle over peanuts and remaining mint.

Helloooo avocado-egg salad open face sandwich!

Using fork mash up 3 hard boiled eggs, add 1/2 avocado, mashed, chopped fresh cilantro, fresh dill, 1/4 c chopped chives, 1 tbsp avocado oil, 1/3 tsp garlic salt. mix all the ingredients up and throw it in top your bread.

Asparagus, burrata, wild garlic & hazelnut pesto 💚

Recipe
1 bunch asparagus
Half a ball of burrata
20g wild garlic, washed
20g rocket/ arugula, washed
40g olive oil
30g hazelnuts, toasted (plus more roughly chopped for garnish)
20g Parmesan
Zest and juice of half a small lemon

1. Bring a large pan of salted water to a rolling boil and cook the asparagus for 2-4 minutes depending on thickness and drain
2. Blend the olive oil, wild garlic, rocket, lemon, hazelnuts and Parmesan in a food processor until roughly smooth
3. Plate the asparagus, top with burrata, pesto & hazelnuts, salt & pepper to taste
