✨ Making delicious soup that’s good for your kidneys is easy!
Here’s a simple guide to help you get started.
1️⃣ Sauté Aromatics: Sauté onions, carrots, celery, garlic, ginger, shallots, leeks, lemongrass, fennel, or bell peppers in olive oil or avocado oil.
2️⃣Add Seasoning: Use dried herbs like thyme, oregano, or basil. Try spices or blends such as paprika, cumin, coriander, red pepper flakes, five-spice, curry powder, Italian seasoning, Cajun seasoning, or any no-salt mix you like.
3️⃣ Add Hearty Veggies: Include cauliflower, sweet potatoes, cabbage, mushrooms, butternut squash, potatoes, parsnips, or turnips.
4️⃣ Add Stock: Choose unsalted or low-sodium stock if possible..
5️⃣ Simmer: Simmer for 20-30 minutes until the veggies are soft and the flavors are combined.
6️⃣ Add Quick-Cook Items: In the last few minutes of cooking, add any quick-cooking ingredients or pre-cooked items that just need to be heated through. This includes soft or leafy vegetables, beans, tofu, or cooked grains.
7️⃣ Add Toppings: Finish with fresh herbs like parsley or cilantro, grated cheese, croutons, a drizzle of olive oil or balsamic vinegar.
*If you are using uncooked pasta, lentils, or quinoa, add them during the simmering step for the right cooking time according to package directions.
