This Fall Harvest Salad is cozy, crunchy, and packed with flavor! The perfect way to enjoy fall produce while fueling your body with balanced nutrition.

Directions:

Peel and cube butternut squash, toss with a little olive oil, salt, and pepper, and roast at 400°F for 20–25 minutes. For extra crunch and protein, roast a can of chickpeas the same way!

Layer 4 cups mixed greens, 1 sliced apple, ½ cup roasted squash, ½ cup roasted chickpeas, ¼ cup cranberries, ¼ cup nuts, and ¼ cup goat cheese. Drizzle with 2 tbsp balsamic vinaigrette and toss gently before serving.
