Cold Fennel and Zucchini Noodle Side Salad
Ingredients

- 1 handful of cilantro
- 2 tablespoons extra virgin olive oil
- 1 bulb fennel
- 1 green onion
- 1 small jalapeno pepper
- sea or kosher salt and ground black pepper to taste
- 2 limes
- 1 small red bell pepper
- 1 tablespoon rice vinegar
- 1 small or medium zucchini

Preparation
Using a mandolin, or your awesome knife skills, shave nice thin slices of the fennel bulb

Slice red bell pepper in 1/8 slices

Chop the green onion and cilantro

Remove the seeds from the jalapeno and slice thin slices of the jalapeno. Only use the amount you want based on how much heat you need

Cut the ends off of the zucchini and slice 1/8 slices lengthwise, then turn those slices sideways and slice 1/8 slices again. You should have slices that resemble noodles of zucchini

Place all of the veggies in a bowl and add the rice vinegar, juice of the 2 limes, and the olive oil and toss.

Add a pinch of salt and pepper to taste.

Place the bowl in the refrigerator for at least 30 minutes to chill and open up the flavors.

Garnish with fennel sprigs before serving!

Ginger-Baked Pears
Ingredients

- 1 cup dry white wine
- 2 tablespoons sugar
- 1 vanilla bean split
- 1 tablespoon very finely-minced ginger
- 1 teaspoon cinnamon
- 3 large pears halved, cored

Preparation
Preheat the oven to 350 degrees.

Combine the wine, sugar, vanilla, ginger, and cinnamon in a medium saucepan and bring to a boil.

Place the pears cut-side down in a baking pan.

Pour the wine mixture over the pears.

Cover and bake until the pears are soft, about 25 to 30 minutes.

Serve pears with juice on top.

This recipe yields 6 servings.

Serving size: 1/2 large pear.

Creamy Homemade Tomato Soup
Ingredients

- 1 can chopped tomatoes
- 1 medium onion
- 4 Fresh Tomatoes
- 4 Tablespoons Tomato Puree
- 2 Celery Stalks
- 1 Leek
- 3.5 TBSP Unsalted Butter
- 1/2 cup fresh cream
- 2 Teaspoons Dried Basil
- 2 Teaspoons Salt
- Black Pepper to taste
- 4 cups water
- 1 Chicken Stock cube
- 4 tbsp sour cream

Preparation
Chop the onion, celery, and leek. Melt the butter in a pot over a medium heat and throw the chopped vegetables in.

Saute for 5-7 minutes.

Add the canned and fresh (diced) tomatoes as well as the basil.

Pour in water, add salt, a chicken stock cube, and bring to the boil. Reduce and simmer for 20 minutes. Now it is time to pour the fresh cream in. Stir and season with pepper. Taste it.

Add more salt if needed. Finally, blend using a hand blender and you are ready to go.

Serve warm topped with a dollop of sour cream.Enjoy!

Four-Ingredient Blueberry Frozen Yogurt
Ingredients
- 2 cups frozen blueberries
- 1/3 cup non-fat Greek yogurt (or any plain yogurt)
- 2 Tbs maple syrup (or any sweetener)
- 1/2 Tbs lemon juice

Preparation
Place all the ingredients in a food processor or blender and mix until smooth. If you want the frozen yogurt to taste more like a sorbet, add a tiny bit more of lemon juice.

Serve immediately with your favorite toppings.

Chicken Tortilla Soup with Bone Broth
Ingredients
- 1 tablespoon olive oil
- 1 small onion chopped
- 1 garlic clove minced
- ½ jalapeno pepper chopped
- 1 cup fresh corn
- ½ teaspoon cumin
- ½ teaspoon chili powder
- ½ teaspoon cayenne powder
- 5 cups Kettle & Fire Chicken Bone Broth
- 1 medium tomato chopped
- ¾ cup organic canned tomato sauce
- 1 cup cooked chicken breast shredded
- 1 avocado
- 1 corn tortilla sliced into thin strips
- ½ tablespoon cilantro roughly chopped

Preparation
In a large stock pot over medium heat, warm the olive oil.

Add the onion, garlic and jalapeno, and cook until onions are translucent, about 5 minutes.

Add the remaining ingredients, minus the avocado, tortilla and cilantro. Turn the heat down to a simmer and cook, stirring occasionally, for 20 minutes.While the soup cooks, crisp the tortilla. On a medium non-stick pan over high heat, add the tortilla strips and cook, stirring, until golden brown on both sides.

Pour the soup into large bowls and garnish with avocado, tortilla strips and cilantro.

Have you ever taken a bite in to a delicious looking cucumber and found it bitter? Never again! Simply cut off each end of the cucumber before peeling it and rub the cut piece on the end of the cucumber. You’ll see it “foam” on the end as it removes the bitter. Rinse, cut and eat as usual.

Eating right while traveling can be a challenge! Besides finding creative ways to get your exercise in, a good tip is to BYOF (bring your own food) Make a smart food kit before you head out.

Don't forget the dishes and silverware as well. Let there be no excuse.

--BOTTLED WATER is the number one thing to bring! A protein shaker for your water is a good idea because when needed, you can get your protein shake in as well.

--Protein powder, spices, Stevia and other things that may come in bulky containers can be packed in baggies or Tupperware.

-- Fresh fruit and veggies are a must have.

--dried fruits, nuts, seeds and jerkey for snacks.

--protein bars.

--packaged and sealed meals like oatmeal, and tuna are great.

--make sure you're staying near a grocery store so you can stock up when necessary.

--Does your room have a refrigerator?

--Almond milk, tea, and your own coffee.

Make sure to add as many healthy options as possible to avoid excuses you might make along the road.

Additional travel tips:

Make sure you don't skip meals. Eat every 2-3 hours to avoid insulin spikes. Have one of your travel snacks to keep your blood glucose levels stable.
When dining out, avoid starchy carbs (bread, pasta, rice, potatoes, etc.) as much as you can because restaurant portions are always too large.

Instead opt for and load up on non-starchy carbs (green vegetables).
Before heading out to a restaurant, look at the menu online. Pick out your healthy meal choice before even getting to the restaurant. This will help you avoid impulsive bad food choices.

If you're visiting friends or family, let them know that you're watching what you eat. This way, if they were thinking of making a pie for you or taking you out for ice-cream, they can think of other things to do for you.

Limit your alcohol. Avoid any sugary drinks!
