Hot cocoa with marshmallows and chocolate sugar wafers.

MUSHROOM & MOZERELLA OMELETTE
* 1 tbsp butter
* 4 thinly sliced baby bella mushrooms
* 2 tbsp green onion, chopped
* 2 eggs
* 2 tsp water
* dash of salt & pepper
* 2 tbsp shredded mozerella cheese

1. Melt butter in 8" nonstick pan over medium heat. Add mushrooms and onion, cook on medium-low heat until mushrooms are tender.

2. Set mushrooms & onions aside in a small bowl, leaving only melted butter in pan.

3. In a small bowl, beat eggs, water, salt &pepper.

4. Swirl pan, on medium-low heat, to coat bottom and sides with the butter.

5. Pour egg mixture into pan. Tilt pan gently to spread evenly against the edges of the pan.

6. As egg begins to look done on edges, tilt pan slightly, spreading mixture, and score egg with spatula to allow the uncooked egg to make contact with pan.

7. Once egg is mostly cooked through, use wide spatula to flip egg ONCE.

8. Sprinkle cheese onto the eggs, then spread on mushrooms &onions, scraping out any butter left in bowl onto omelette.

9. Fold omelette, leaving in pan for another minute before sliding it right out of the pan, and onto your plate.

10. EAT UP!

Our simple, Sunday night meal:
club sandwich w/pickle slices,
chicken and dumplings with cornbread,
a pineapple slice w/shredded cheese & a dollop of mayo,
cherry jello w/whipped topping

After a big Sunday dinner, this is a nice little bite to round out the evening. Of course, if this is NOT to your liking, we can make you anything you like.
