Yesterday a co-worker gifted me fresh blueberries, so I made some jelly real quick before bedtime last night. I used 9 cups of berries, the juice of 2 lemons, 2 boxes of pectin and 5.5 cups of sugar. The sugar amount was considerably less than what most recipes will call for, but I just don’t like my jellies so sweet that I can’t enjoy the fruit taste. I have also found that generic pectin works just as well as the name brand. The results were yummy!

I recently stuck unused celery in my herb bed and it continues to thrive! Instead of sticking celery back in the refrigerator, why not try putting it in some dirt for an endless supply. I simply water as needed when soil looks dry and keep in a sunny spot. Cheers.

I am a fan of “bone broth sipping,” and wanted to share my un-recipe, recipe. I purchase my beef bones from a local grower and I roast them in the oven to bring out more flavor. I then purchase bell pepper, onion, garlic and celery, organic if possible, and sautéed in olive oil. I place the beef bones in a crock pot, covering with water, and adding my sautéed veggies. I season with salt, pepper, and other spices and slow cook for 10-12 hours. The aroma is inviting! The bones can be used up to 3-4 times, so I refreeze them and put in a ziplock bag with the date and number of times I have used them. I will post a video clip in the comment section. Enjoy!

I am making my recipe for pecan pie's tomorrow and I am very excited. I have not made a pecan pie in years. I am re-posting the recipe in case anyone wants to try it. I use brown rice syrup in place of corm syrup, but you don't have to. :)

Pecan Pie with Brown Rice Syrup
Healthy Southern Style



1 cup pecans, chopped1/3 cup brown sugar1/2 stick unsalted butter1 cup* brown rice syrup (a maltose/maltotriose sugar)2 tablespoons cornstarch3 eggs1 teaspoon vanillaPie shell(s), unbaked*If brown rice syrup is not available, light corn syrup will substitute nicely.



Preheat oven to 300° F and bake 40 minutes for pecan tarts and about 50-55 minutes for pies. This recipe makes 15 pie tarts or 1 deep dish pie.



In mixing bowl cream butter and brown sugar until fluffy, adding eggs, pecans, cornstarch, brown rice syrup, and vanilla. Mix well and pour into pie shells. Place pie shells on cookie sheet and transfer to oven and bake.



Using brown rice syrup in this pecan pie recipe adds flavor without unwanted sweetness that is common with most pecan pies.

Looking for something to do while the world around you is at a standstill? Consider cleaning up existing flower beds, or planning and planting a new one. Perhaps a local hardware store is selling plants and flowers. Get outside if you can. Practice social distancing, but get those hands in some soil! I believe you may find it therapeutic.

Another idea: Plant a small herb bed/garden using pots that you can keep close to your dwelling. Then look up recipes that you can use your fresh herbs in. Happy Planting!

As we find ourselves in these unprecedented times, one thing we can all do is stay hydrated, and get fresh air. Keep the social distancing, but step outside, or onto a balcony where you live, and just breath in some fresh air outside for a few minutes. It can also lift your spirits. Stay strong, stay calm. We will all get through this.
