Sometimes going gluten-free or dairy free can feel overwhelming because you crave those traditional dishes. 😋
This is a recipe from Dr. Clemenza which takes a really tasty twist on the traditional spaghetti and meatballs.
Coconut curry meatballs directions:
Meatballs:
Mix together and shape into balls
1lb grass fed ground meat
1 egg
(Instead of bread crumbs I used nutritional yeast, salt, pepper, turmeric, and green goddess seasoning! My favorite 😊)
I baked them at 350 for about 12 min
The curry:
Sauté Chopped red onion in olive oil over medium heat. Add 1 can organic unsweetened coconut milk and 2-4 oz curry paste with organic baby spinach.
Add the meatballs and then serve over rice noodles, spaghetti squash or zucchini noodles!
