Food is Medicine, St. Patrick’s Day edition: Many people in our county are celebrating St. Patrick’s Day today with parade and celebration.
It’s the perfect day and the perfect weather to try Colcannon — the beloved Irish classic of creamy mashed potatoes and sautéed kale (or cabbage). It’s more than comfort food. It’s a reminder that food is medicine.
Here’s why this humble dish earns a place at your table:
🥔 Potatoes are rich in potassium, vitamin C, and vitamin B6 — nutrients that support nerve function, immune health, and energy metabolism. They’re also a great source of resistant starch, which feeds beneficial gut bacteria and helps regulate blood sugar.
🥬 Kale & cabbage are cruciferous powerhouses packed with anti-inflammatory compounds, vitamin K (essential for bone health), and fiber that supports digestion and gut integrity — areas that matter deeply for those managing chronic illness.
Together, they make a warming, whole-food meal that’s as kind to your body as it is delicious. If you wish, serve with a side of corned beef, Irish bacon, beef sausage, or any other protein you have on hand.
Here’s to a little nourishment and magic in your bowl. 🍀
