It takes time, thoughtfulness and detail to create a meal that is more of an experience shared with friends than something we rush through on the couch, catching up on the DVR. This art, for many, has gone by the wayside and I want to bring it back. I aim to create an atmosphere where

people feel taken care of. I feel my food is another way to communicate. And I've decided to share it with you. The Kitchenista's goal is 3 fold. To bring people together over meals you don't have to stress over, to share tips and tricks to give you the confidence to entertain your friends or family, and to get us all back around the kitchen table - face to face - without the hustle and bustle and technology of life. We cater small dinner parties up to 10 people. We share recipes to impress your friends and family. We aggregate tips on how to entertain guests with little or no stress. So lets talk and see what we can do together! ABOUT THE COOK:
I'm Ashleigh McHenry. I come from a long line of people who are creative, entrepreneurial...and hellacious cooks. When I look back at my childhood and even now, many of our conversations, educations and good times were focused around the kitchen. I have spent my entire career in the communications industry...in radio, TV and print....but often times, when I have come home from a long day at work, my creativity and feelings are better communicated through what I whip up for dinner than anything I did int he last 8 hours behind a computer. When I started sharing photos of what I was cooking, people kept telling me that they wished I cooked for them, and how delicious everything looked. I was humbled anyone thought much of what I made. After a few recent seminal events in my life, it became clear that life is short and needs to be taken by the horns. Opportunities and minutes don't last long. We're given but this one life and we need to make the most of it. Let's eat!

Allergies are whipping our hynies so it’s time for some soup. Chocked full of veggies like cabbage, carrots, onions, bell pepper, tomatoes, broccoli and cauliflower, I chucked a few celletani noodles in there too. Time for a laundry break. ❤️

Y’all, I don’t like breakfast. Never have and probably never will. But I’m trying to get into the habit of eating it; there’s too much evidence that it can contribute to weight loss.

This morning was my usual coffee, a soft boiled egg, low fat cottage cheese with a few strawberries and a teaspoon of granola for some texture. Right at 250 calories, it satiated my hunger and I’m just now thinking about lunch…which never happens. So I’d say it was a success.

LUNCH TIME: Mission Carb Balance spinach and herb wrap, classic hummus, rotisserie chicken, lettuce, avocado, cherry tomatoes, cucumber, salt and pepper. Carrots and grapes on the side. 300 calories with the carrots and grapes. Eat your colors!

It’s time. I’ve got to get back on a healthier menu. But that doesn’t mean I will be scrimping on flavor.
Today for lunch, I made albacore white tuna salad with red onion, celery, parsley, a tiny bit of mayo, mustard and a big squeeze of lemon. Instead of bread, which I shouldn’t have anyways thanks to Hashimoto’s Disease, I am using romaine lettuce cups. For a whole can of tuna with all of its fixins, I’m right at 400 calories.
Come along with me as I trim down and figure out the best ways to cook to be healthier and even tastier.
