This yummy recipe is proof that healthy eating can be quick, easy, and delicious.

1 small onion diced
1 tbsp minced garlic
Dice the pepper toppers that you cut off
1lb of 93/7 ground turkey
Sauté in 2tbsp of olive oil
Add 1c of cooked rice

Preheat the oven to 400 degrees
Stuff the peppers
Top with shredded cheese and cook for 10-15 minutes until cheese is melted.
