Recipe from Eat Feel Fresh
Preheat the oven to 350°F and line a baking sheet with parchment paper.
Cut the sweet potatoes lengthwise into thin ¼” slices.
Place sweet potato slices on the prepared baking sheet. Bake for 15-20 minutes until they are tender but not cooked all the way through.
Remove from the oven and allow them to cool completely. Once cool, refrigerate in an airtight container until ready to eat.
When ready to serve, pop a slice in the toaster oven on the highest setting. It will become warm, bubbly and crispy on the edges.
Topping variations:
1 hummus, lime juice, parsley or cilantro
2 cooked (mashed) mung beans, parsley, cilantro, black beans
3 sliced avocado, lemon juice, cumin, sea salt, parsley
