🎄🥗 Do doctors actually eat what they preach?

At the answer is still a big YES…even during the holiday season! ✨🎅

Holiday treats are fun, but we keep our plates balanced so our bodies (and spines) stay happy through all the festivities.

Today’s lineup: roasted chicken, non-GMO tortilla chips, peppers, lettuce, guacamole, salsa, and apple with peanut butter.

🥗 KALE, APPLE, WALNUT SALAD

Servings: 6

Ingredients

• 12 ounces kale

• ½ cup walnuts, chopped

• 1 medium Honeycrisp apple

• 3 ounces goat cheese crumbles

• ¼ cup dried cranberries

• ¼ cup dates, chopped

Maple Dijon Dressing

• 2 tablespoons maple syrup

• 1 tablespoon Dijon mustard

• 1 teaspoon garlic, minced

• 2 tablespoons apple cider vinegar

• ¼ cup olive oil

• 1 teaspoon salt

• 1 teaspoon oregano

• ½ tablespoon onion, grated

Instructions

1. Add the chopped kale to a large bowl.
2. Toss in the walnuts, diced apple, goat cheese, cranberries, and dates.
3. In a small jar or bowl, whisk together the maple syrup, Dijon, garlic, vinegar, olive oil, salt, oregano, and grated onion.
4. Pour the dressing over the kale mixture and toss until evenly coated.
5. Enjoy right away or let it sit for 10 minutes for deeper flavor.

Gluten-Free Alternatives: No changes.

Dairy-Free Alternatives: Omit the goat cheese crumbles.
