Tofu Veggie Scramble! A protein rich option that will leave you feeling full, satisfied, and fueled for the morning.
🫑 Ingredients:
- 1 cup frozen pre-chopped vegetables, blend of choice, thawed
- 1 tbsp Italian herb blend, dry
- 2 tbsp nutritional yeast, optional
- 1/2 tsp salt
- 1/4 tsp pepper
- 2-3 cups tofu crumbles
- 2-3 tortillas, burrito size
🔥 Instructions:
1. Heat a nonstick skillet on medium heat on your stove top. Add pre-chopped vegetables and stir to heat through.
2. Add herb blend and salt and pepper then stir. If using nutritional yeast (a vegan option to give a cheese flavor), add it now. Stir to combine.
3. Add in tofu crumbles and cook to heat evenly.
4. If eating at home, serve on a plate with sides of choice. If making to go, add filling to the center of a burrito sized tortilla. Wrap and you're ready to head out the door.
💡 Quick Tip:
You can make a few wraps ahead of time and store for easy breakfast options for the week. Cook the filling and remove from heat. Cool completely before added to tortillas. Once you add filling to the tortilla, wrap in plastic wrap individually and store in your fridge for 2-3 days.
