It still may be chilly in Jersey, but you can feel the promise of Spring. Finally made it to my local farm that opened 2 weeks ago which is a first for me, as I am usually one of the first patrons to greet them on opening day. A simple 10–minute walk is not so simple for me these days, a short walk can leave me crashed at home listless for hours or days. The effects of living with ME and POTS can be debilitating. Hard to put these crashes into a cohesive descriptive, but if you know, you know.
Ending the day with the Spring Issue of Edible New Jersey. I’d say, it was a good day.🪻

There may be snow on the ground and frozen icicles dripping from our trees, but I’m dreaming of the sunshine of Spring. So for lunch, I’m serving up a simply delicious Mediterranean chickpea salad. Sometimes soup is not what’s calling you for comfort on a chilly winter Sunday.❄️

In February of 2024, I could barely move from my bed to the couch. Now that I am regaining my strength and healing from Long COVID, 2025 is all about celebrating life with the ones I love. Sharing the experience of travel, theater and all things creative! Yesterday, I celebrated upcoming birthday with a trip to Broadway. We got lucky to see the last showing of Left on Tenth starring Julianna Margulies and Peter Gallagher! The play was funny romantic, sad, joyful and immersed with hope. Ahhh….Hope, good word for 2025!
