Peanut Butter Cheesecake Bites

1/2 c softened cream cheese
1/4 c natural or sugar free peanut butter
2 tbs powdered keto friendly sweetener

Combine all ingredients together and use a small cookie scoop or melon baller to make small golf ball sized balls.

Place in a container and refrigerate until set.

2 carbs each

Option to roll in crushed no sugar added chocolate chips or peanuts, or both!

Loaded Chicken Keto Casserole

2 cups shredded rotisserie chicken
12 oz frozen cauliflower rice (I thawed it)
4 strips bacon cooked and chopped
1 tsp Italian seasoning
1/2 teaspoon salt/pepper
1/2 cup cream cheese room temperature
1/4 cup heavy cream
1 cup shredded cheese, divided

Set 1/2 c of the shredded cheese aside.
Combine all ingredients well and transfer to a greased baking dish. Bake at 350 for 20 minutes. Finish in the broiler for a few minutes. I also added a few pieces of the bacon on top.

Peanut Butter Mug Cake

1 egg
3 tbsp unsweetened peanut butter
1-2 tbsp sugar substitute (monk fruit, swerve, erythritol)
1/8 tsp baking powder

In a mug whisk the egg, sugar, and peanut butter together. Next, microwave for approximately 1 minute to 1 minute 30 seconds, or until you see the top puff up and looks set on top.

Enjoy!!

Options: add no sugar added chocolate chips, replace 1 tbs w choc zero hazelnut, top w sugar free chocolate.

Keto Sausage French Toast Roll Ups

10 Slices Soft Keto bread (I used Aunt Millie’s Carb Smart bread)
10 Sausage links (fully cooked)
3 Eggs
½ cup Almond Milk or 1/4 c HWC
1 teaspoon Vanilla
½ teaspoon Cinnamon
Optional: SF Maple syrup for dipping

1. Start by making sure your sausage links are cooked and set them aside. You can use the pre-cooked kind also.
2. Take crust off bread and use a rolling pin to flatten out each piece then set aside.
3. In a swallow bowl whisk together eggs, almond milk or HWC, cinnamon and vanilla.
4. Warm a skillet on medium and spray with non stick spray or use butter.
5. Place a cooked sausage link in flattened bread and roll. Gently roll in egg mix and let any excess run off. Place in the warm skillet with the seal down. Allow to cook for a few minutes turning to get each side cooked.
6. Serve warm with maple syrup for dipping.

About 1-2 net carbs each (depends on brand of sausages)
~100 calories
8g protein

Bang Bang Chicken Bites 💥

1-2 lbs Chicken Tenders or Breasts
Garlic powder
Onion powder
Paprika or Smoked paprika
Salt/Pepper

3/4 c Mayo
1/4 c G. Hughes Thai Chili
1-2 tbs Chili paste or garlic chili paste for heat (or chili flakes)

Cube your chicken for chicken bites.
If you use chicken breasts, score them on one side.
Season the chicken with equal parts garlic powder, onion powder, and smoked paprika. Season with a dash of salt and pepper.

Mix your chicken bites around in the seasoning until well coated. Or if you’re using chicken breasts, make sure you season on both sides. Press the seasoning into the scores of the chicken.

For the bang bang sauce:
Combine the mayonnaise, the Thai chili sauce, and one to 2 tablespoons of the chili paste for heat. I suggest adding 1 tablespoon, and then tasting your sauce before adding a second.

Preheat air fryer to 400, or preheat over to 350.

Add half the mixture of the bang bang sauce to the chicken and mix together. Once combined transferred to your sprayed air fryer tray. Bake at 400 for 12 minutes, mixing half way through.

For the chicken breast or the chicken tenders, coat the chicken on both sides and then place on to a baking dish. Bacon the oven at 350° for 25 to 30 minutes.

Make sure the internal temperature of your chicken reaches 165° and the juices run clear.

The remainder of the bang bang sauce for dipping.

Egg Bites 🥚

Ingredients:
6 eggs
1/2 cup shredded cheese
(If you omit the shredded cheese use 1 cup cottage cheese)
1/2 cup cottage cheese
1/4 tsp salt
1/4tsp pepper

1. Combine all ingredients in a blender, and blend.
2. Fill a baking dish with 1/4 in water. Use silicon cupcake molds or individual cupcake liners.
3. Fill the cupcake molds 3/4 way full with the egg mixture.
4. Add the optional ingredients.
5. Bake in the over at 300 degrees for 35-40 minutes.

Optional ingredients:
Mushrooms and swiss cheese
Ham and cheddar cheese
Broccoli and cheddar cheese
Bacon and gruyere cheese
Peppers, onions, and monterey jack cheese
Spinach, tomato, and parmesan cheese or feta cheese
Jalapeño and cheddar
Bacon, mozzarella, hot sauce
Sun dried tomato and spinach
Kimchi

Keep in the refrigerator for 4-5 days

1 egg
1 avocado
1 cup cheese (mozzarella)

Combine all 3 ingredients and then divide in half.
Using a baking sheet or silicon mat, press the mixture down in a circular shape about 1/4 inch thick.
Bake at 400 degrees for 30 minutes.

22g fat
6g carbs

Big Mac in a Bowl

1 lb ground beef
1 bag Cole slaw mix
1/2 onion diced
American cheese

Big Mac sauce:
1/2 cup mayonnaise (keto-friendly mayonnaise)
2 tablespoons pickles, finely diced
1 tablespoon onion, finely diced
1 tablespoon ketchup (KETO: use sugar-free, see notes on ketchup below)
1 teaspoon sweetener (KETO: use a 1:1
sugar substitute)
1 teaspoon dill pickle juice

Instructions:
1. Sautéed diced onion. Add ground beef and brown, drain the grease. I seasoned mine with onion powder, garlic, salt, and pepper.
2. Add the bag of coleslaw and sauté for five minutes.
3. Cover with American cheese slices or any cheese of your choice. Cover and steam for 3 to 5 minutes until the cheese is melted.
4. Top with a drizzle of the big Mac sauce.

Most of us do not drink enough water. It’s recommended that you drink no less than half your body weight in ounces of water daily.

Here’s a few tips to get that water in, and a water calculator to see how much you need.

•Carry a water bottle with you, or keep a cup of water at your desk and refill it often.
•Eat more fruits and vegetables, as food provides 20 percent of your fluid intake.
•Make your water more palatable by adding lemon, lime, or cucumber.
•Spread out your water consumption throughout the day. Drink water when you wake up, and at every snack and meal.
•Use an app or timers to remind you to take a drink.
•Use the 10 gulp method and take 10 gulps every time you go to take a sip!
