I’m at a stage in my cooking skills that I can make up recipes. This time I did my best to replicate those classic chocolate cookies covered with powdered sugar that are often made for the holidays.

This batch was made with coconut and oat flour, a little ghee, eggs, nut milk, agave and coconut flakes for the snow effect. They came out pretty good. Next time, I’ll add a bit more agave and ghee. Ghee is so expensive that I hold back. I’m also pretty sensitive to too much sugar of any kind.

This is what I feel inspired to do on these cold winter New England days. No partying for me this New Year’s. Felt so good to maintain my routine instead.

I’d love to ski today, but waiting for the prices to drop. Trusting there will be more powder in the future.⛷️

How are you spending your holiday?

The horse care doesn’t end in winter.

It’s been all about preventing these girls from chewing their shed. They created a lot of damage, which we repaired on Saturday.

This hay ball helps with boredom. They get stimulation from it. I feed them the hay ball with their lunch time treats.

We’ve been having a few days of freezing rain on top of six inches of fresh powder & Molly caught a chill.

Yesterday, I made two trips to the farm supply store for blankets. I’ve never had to put blankets on them, so didn’t know how to measure.

They look a little girly in them b/c they barely fit & have a dressage style look, but they were good about putting them on.

Phew! Long day and I didn’t want any problems as the sunset. Noticing the days are getting longer. Hooray!

I think I can relax a bit for New Years.

Nothing better than a surprise holiday visit and help on the farm.

The ponies have been chewing their shed, so we tacked up fencing and problem solved.

My niece Kerri and her partner Kenny did a little equine therapy with Darling after. Darling was more receptive to Kenny because he groomed her. They need to build trust.

We had such a nice holiday week visit with a little hanging out and a little farm work. Grateful.

Decided I’d better spend some time in front of the light stand. This gift found me at a thrift shop nearby for only $7.50!

Between the holidays and the clouds, seasonal affective disorder (SAD) is setting in. For a while, it was balancing, but I think the holidays have made it harder. We’ve also had a long stretch of pretty snow, which bring clouds in the Northeast.

Morning yoga really shifted my mood. Heading out to clear some manure and exercise Molly soon. We’ll ride through the neighborhood with bells on.

How is your mental health? What actions are you taking to come into balance?

I’m also accepting the quiet time and ability to finally rest. So much more time to work on indoor projects. Time to think. Plan. Pray.
