It's officially pumpkin spice season! Try these low-carb Pumpkin Muffins for your fix of fall flavors!

Nutrition Information:
Serving: 1muffin | Calories: 156cal | Carbohydrates: 6g | Protein: 5g | Fat: 12g | Fiber: 3g | Sugar: 6g

What You'll Need:
▢ 4 large eggs
▢ ½ cup pure pumpkin puree
▢ 4 tablespoon unsalted butter melted and slightly cooled
▢ 1 teaspoon stevia glycerite (equals about ⅓ cup sugar)
▢ 2 teaspoons vanilla extract
▢ 2 teaspoons ground cinnamon
▢ 6 tablespoons coconut flour (44 grams)
▢ 1 teaspoon baking powder (gluten-free if needed)

Directions:
▢ Preheat your oven to 350 degrees F. Line 6 muffin cups with foil or silicone liners and spray the liners with oil. You can use well-greased paper liners, but that would increase the risk of sticking.
▢ In a medium bowl, whisk together the eggs, pumpkin puree, melted butter, stevia, vanilla, and cinnamon.
▢ Whisk in the coconut flour, mixing patiently until very smooth. Finally, mix in the baking powder.
▢ Using an ice cream scoop, pour the batter into the prepared muffin cups.
▢Bake until set and a toothpick inserted in center comes out clean, 22-25 minutes
▢Transfer the muffins to a cooling rack and cool completely before enjoying. Texture improves when they reach room temperature.

Helpful Hacks and Substitutions:
▢ We prefer to use foil liners when baking with coconut flour. Coconut flour muffins tend to stick to paper liners, and even to silicone liners. But if you use greased foil liners, they don't stick.
▢ Coconut flour and almond flour behave differently in baked goods. Almond flour would not be a good substitute for this recipe.
▢ The Stevia glycerite formulation nearly eliminates the bitter aftertaste typical of other stevia products, but you can experiment with replacing the stevia with ⅓ cup of your favorite granulated sweetener. If you do, check the batter. You might need to add a little water if it's too dry.

Breakfast Ideas: Muffin-Tin Omelets with Feta & Peppers

Serving size: 2 omelets
Per Serving: 226 calories; 12.7g protein; 6.7g carbohydrates; 1.3g dietary fiber; 3.7g sugar; 16.7g fat

What you'll need:
2 tablespoons extra-virgin olive oil
¾ cup diced onion
¼ teaspoon salt
1 medium red bell pepper, diced
1 tablespoon finely chopped fresh oregano
8 large eggs
¾ cup crumbled feta cheese
½ cup low-fat milk
½ teaspoon ground black pepper
2 cups chopped fresh spinach
¼ cup sliced Kalamata olives

How to do it:
1. Preheat oven to 325 degrees F. Coat a 12-cup muffin tin with cooking spray.
2. Heat oil in a large skillet over medium heat. Add onion and half of the salt; cook, stirring, until starting to soften, about 3 minutes. Add bell pepper and oregano; cook, stirring, until the vegetables are tender and starting to brown, 4 to 5 minutes more. Remove from heat and let cool for 5 minutes.
3. Whisk eggs, feta, milk, black pepper and the remaining salt in a large bowl. Stir in spinach, olives and the cooked vegetable mixture. Divide among the prepared muffin cups.
4. Bake until firm to the touch, about 25 minutes. Let stand for 5 minutes before removing from the tin.

Wrapped individually in plastic wrap, the cooked omelets can be refrigerated for up to 3 days or frozen for up to 1 month. To reheat, thaw, if necessary, and remove plastic wrap. Wrap in a paper towel and microwave each omelet on High for 20 to 30 seconds.

Recipe Ideas: Turkey Taco Lettuce Wraps!
Approximately 240 calories, 13g fat, and 7g of carbs per serving.

You'll need 1 lb 95% lean ground turkey
1 Tbsp olive oil
2 cloves garlic
Salt and black pepper to taste
1 Tbsp chili powder
1 tsp ground cumin
1/2 tsp paprika
1/2 cup tomato sauce
1/2 cup low-sodium chicken broth
Iceberg or Romain lettuce leaves, shredded Mexican cheese , diced tomatoes, diced red onion, diced avocado, chopped cilantro, and light sour cream, for serving.

1. Heat olive oil in a non-stick skillet over medium-high heat.
2. Add onion and saute 2 minutes. Add turkey and garlic, season with salt and pepper, and cook, tossing and breaking up turkey occasionally, until cooked through.
3. Add chili powder, cumin, paprika, tomato sauce and chicken broth. Reduce to a simmer and cook about 5 minutes until sauce has reduced.
4. Serve mixture over lettuce leaves with desired toppings.

We are looking for a receptionist/office assistant that is helpful and team orientated. Our ideal candidate has a warm personality and excellent phone skills. Duties will include answering the phone, scheduling patients, calling to remind patients of appointments, and helping patients with weigh-ins and updates for their health journey. Experience is helpful, but not required. We will train on the job. This is a part time position.
