In preparation for this celebration, consider grabbing the ingredients below to make this flavorful, vibrant, and super fresh Pico de Gallo recipe. This zesty Phase II approved combo is sure to enhance a variety of dishes, so be sure to tell us all about your “pico-success!”
1 cup finely chopped white onion
2 cups ripe Roma tomatoes, chopped
¼ cup lime juice
¾ tsp. sea salt
½ cup fresh cilantro, finely chopped
Crushed red pepper, to taste
Mix all ingredients, cover, and refrigerate for a day. Serve over a protein of your choice, or over a bed of lettuce. Enjoy!

It’s a great time to get your journal out and make a list of positive affirmations or write out your goals. Holding on to mental self-doubt or things that aren’t serving you? Try this, make a list of everything that makes you feel small, self-conscious, or doubtful of yourself. Write it out on a piece of paper by hand, then burn that list of negative self-talk, or baggage in your life, in a heatproof bowl or fire pit to symbolically free yourself of these limiting beliefs.

Dawn Cutillo has always had a passion for health and for helping women look at their overall wellness through the many factors that influence the whole, healthy being. Educated in health and nutrition, Dawn worked in this industry for many years, advising women about how to make proper food choices and develop an exercise structure in order to find the best way to lose weight and achieve optimum health. Over time, she became discouraged as she saw women return to her week after week, feeling defeated as their efforts weren’t paying off, either in the mirror or on the scale.
