DOUBLE CHOCOLATE PB CUP BANANA BREAD 🍫 🥜 🍌 For all my chocolate + pb lovers, this banana bread is for you! Here’s all you need to make this deliciously chocolate-y and pb filled recipe:

1 cup GF flour (I used 1:1 GF flour)
¾ cup super fine almond flour
⅓ cup unsweetened cocoa powder
2 tsp baking soda
¼ tsp salt
⅔ cup coconut sugar
2 large eggs
2⅓ cup very overripe bananas mashed (~5 medium or 4 large)
½ cup coconut oil melted and cooled
2 tsp vanilla extract
8 ea double chocolate peanut butter cups (divided) 4, 2-packs, rough chopped
2 tbsp natural creamy peanut butter

Quick and easy desserts = ALWAYS A YES FROM ME!! These gf + df Peanut Butter Cup Blondies are perfect because:
~ 9 ingredients that you probably have in your pantry right now
~ 1 bowl = less dishes
~ less than 30 minutes to bake …so in your mouth faster
~ SUPER FUDGY → the only kind of blondies I want to eat

Inspired by my one of my favorites at True Foods Kitchen, this Roasted Cauliflower with Harissa Tahini is my new go-to. The soft yet crisp roasted cauliflower florets are tossed in a creamy and subtly spicy harissa tahini sauce that’s bursting with flavor.

Here's all you need:

Harissa & Tahini Roasted Cauliflower
2, 12oz bags cauliflower florets, chopped
⅓ cup olive oil
6 cloves garlic, peeled & minced

Harissa Tahini Sauce
¼ cup + 1 tbsp tahini
¼ cup water
¼ cup harissa
3 tbsp lemon juice (1.5 - 2 lemons)
1 tsp salt

Add ins
¼ cup chopped pistachios
4 medjool dates, pitted & chopped
2 tbsp fresh mint, chopped
1 tbsp fresh dill, chopped

If you're like me and love sauce-y noodles, you need to try this recipe - the spicy peanut sauce is so good you might as well make double🔥 It’s the perfect healthy meal that’s gluten free, vegan, and can be made in less than 30 minutes! Here's all you need to make it:

Rice Noodles:
rice noodles
sweet onion
fresh ginger & garlic
carrots
red bell pepper
broccoli

ooey gooey delicious ✨Chocolate Turtle Cake - a moist & fluffy grain-free chocolate cake filled with extra chocolate chips and roasted pecans. Then topped with a homemade caramel pecan topping. Any fudgy chocolate cake lovers, this one’s for you!!

here’s how you make it ⬇️

Chocolate Turtle Cake🍫🐢
2 large eggs
½ cup coconut sugar, packed
¼ cup coconut oil, melted + cooled
¼ cup almond milk
¼ cup pure maple syrup
2 cups super fine blanched almond flour, packed (as you would with brown sugar)
⅓ cup unsweetened cocoa powder, sifted
1 tsp baking powder
1 tsp baking soda
⅓ cup chocolate chips
⅓ cup raw pecans, rough chopped

Caramel Pecan Topping:
¾ cup coconut cream
¼ cup maple syrup
¼ cup coconut sugar
1 tsp vanilla extract
⅛ tsp salt
¾ cup raw pecans, rough chopped

Instructions:
1. Start by roasting your pecans. Preheat the oven to 375F and add ⅓ and ¾ cup pecans to a baking tray. Roast for 5-8 minutes (mine took 7 minutes) or until lightly browned and fragrant. Set aside to cool.
2. Bring the oven temperature down to 350F and line an 8” x 8” square pan with parchment paper.
3. In a large mixing bowl, combine wet cake ingredients – eggs, coconut sugar, melted coconut oil, almond milk, and maple syrup. Whisk together until combined.
4. In a separate small mixing bowl, stir together the almond flour, sifted cocoa powder, baking powder, and baking soda until evenly combined.
5. Add to the bowl of wet ingredients and stir together with a wooden spoon or spatula until just combined.
6. Fold in chocolate chips and ⅓ cup of the cooled roasted pecans.
7. Pour cake batter into the parchment-lined 8”x8” pan and spread in an even layer with a spatula – the batter will be thick.
8. Bake at 350F for ~30-32 minutes (mine took 30 minutes), or until a knife or toothpick inserted comes out moist, but crumb-free. Remove from the oven and let cool completely.
9. While the cake is baking, prepare your topping. Add all ingredients to a small saucepan and bring to a boil. Once boiling, turn heat down to low / medium low and simmer for 9-12 minutes, whisking frequently to ensure caramel doesn’t burn.
10. Remove from the heat once the vegan caramel is thick enough to coat the back of a spoon.
11. Stir in the remaining ¾ cup of roasted pecans and set aside topping to cool.
12. Once cake and topping have cooled, pour caramel pecan topping on top of chocolate cake. Cut into 9 or 12 slices. Enjoy!

Made with just ten simple ingredients, these crumble bars are a must try!! Here's all you need to make them:

Crust & Crumble:
raw walnuts
oat flour
vegan butter
maple syrup
coconut sugar
70% dark chocolate (I used Theo Chocolate)
salt
unsweetened cocoa powder

Vegan Caramel:
coconut cream
maple syrup
coconut sugar
vanilla extract
salt

Our Story

Why hello there! I’m Casey. Glad to have you here :)

I’m a 20-something who loves food. Always trying out quick & easy, simple, healthy, and tasty recipes, I hope to be a resource for other people searching for the same thing. I focus on gluten-free, low carb, and refined-sugar free recipes because that’s what I’ve found makes me feel my best. This means a lot of veggies, but also tons of healthified twists on classics because food should never be boring and always delicious. I’m constantly searching for the perfect combo where easy meets healthy meets tasty.

My parents joke that I have loved food since I was a baby. Their favorite stories involve me always toddling around with food in hand, followed by falling asleep with said food still in hand. I even remember being five and hiding under the table eating a stick of butter. I promise my taste buds have evolved since then!

Growing up, we (my Mom, Dad, and younger brother) ate dinner as a family every single night. It didn’t matter how busy my parents were at work running their own company, or me and my brother’s after school activities. Come 7/8pm we would all sit at the table and share a meal together. These are some of my fondest memories, and to this day I still love and appreciate how food can bring families and people together.
