🧡 Roasted Butternut Squash & Brussels Sprouts
Cozy, colorful, and perfect for Thanksgiving.
Ingredients
• 3 cups butternut squash, peeled & cubed
• 3 cups Brussels sprouts, trimmed & halved
• 2–3 tbsp olive oil
• 1 tsp salt
• ½ tsp black pepper
• 1–2 tsp garlic powder (optional)
• 1 cup dried cranberries
• ½ cup pecan halves or pieces
• Optional: drizzle of maple syrup for sweetness

Instructions
1️⃣ Prep the veggies
Preheat oven to 400°F.
Place butternut squash cubes and Brussels sprout halves on a large baking sheet.
2️⃣ Season & toss
Drizzle with olive oil, then sprinkle with salt, pepper, and garlic powder.
Toss until coated evenly.
3️⃣ Roast until golden
Roast for 25–30 minutes, flipping halfway.
Veggies should be tender and lightly browned.
4️⃣ Add festive extras
Remove from oven and gently stir in:
• dried cranberries
• pecans
Optional: add a light drizzle of maple syrup for extra shine + flavor.
5️⃣ Serve warm
Beautiful on a platter and perfect next to turkey, salmon, or any holiday main!
