Roasted Brussels Sprouts with Nitrate-Free Turkey Bacon
Ingredients:
1 lb Brussels sprouts, trimmed and halved
6 slices nitrate-free turkey bacon, cut into small pieces
1 tablespoon olive oil
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon smoked paprika (optional, for added flavor)
Salt and pepper to taste
Instructions:
Preheat the Oven:

Preheat your oven to 400°F (200°C).
Prepare Brussels Sprouts:

Trim the ends of the Brussels sprouts and cut them in half.
Cook Turkey Bacon:

In a non-stick skillet over medium heat, cook the turkey bacon until it's crispy. No additional oil is needed since turkey bacon has its own fats.
Toss Brussels Sprouts:

In a large bowl, toss the Brussels sprouts with olive oil, garlic powder, onion powder, smoked paprika (if using), salt, and pepper. Ensure the Brussels sprouts are well-coated.
Add Turkey Bacon:

Mix in the crispy nitrate-free turkey bacon pieces with the Brussels sprouts.
Spread on Baking Sheet:

Spread the Brussels sprouts and turkey bacon mixture in an even layer on a baking sheet lined with parchment paper.

Thanksgiving inspired Quinoa and Turkey Stuffed Bell Peppers:
Ingredients:
4 large bell peppers, halved and seeds removed
1 cup quinoa, rinsed
2 cups low-sodium turkey or vegetable broth
1 pound ground turkey
1 onion, finely chopped
2 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried sage
Salt and pepper to taste
Chopped fresh parsley for garnish
Instructions:
Preheat the oven to 375°F (190°C).
Quinoa: In a saucepan, bring the turkey or vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15-20 minutes, or until quinoa is cooked and liquid is absorbed.
Bell Peppers: While the quinoa is cooking, place the halved bell peppers in a baking dish, cut side up.
Turkey Mixture: In a skillet, cook the ground turkey over medium heat until browned. Add chopped onion and garlic, and sauté until the onion is translucent.

Baked Lemon Herb Tilapia with Steamed Asparagus:

Ingredients:

4 tilapia fillets
1 lemon, thinly sliced
Fresh or dried herbs such as thyme, rosemary, or dill
Salt and pepper to taste
1 bunch of asparagus
Instructions:

Preheat the oven to 375°F (190°C).
Place the tilapia fillets on a baking sheet lined with parchment paper.
Season the tilapia with herbs, salt, and pepper. Place a couple of slices of lemon on top of each fillet.
Bake the tilapia for 12-15 minutes, or until the fish is opaque and easily flakes with a fork.
While the fish is baking, steam the asparagus until it is tender yet still crisp.
Serve the baked tilapia with steamed asparagus on the side.

Quinoa Stuffed Acorn Squash:

Ingredients:

2 acorn squash 🎃
1 cup quinoa 🌾
2 cups vegetable broth 🥕
1 small onion, diced 🧅
2 cloves garlic, minced 🧄
1 cup diced celery 🌱
1 teaspoon dried thyme 🌿
1 teaspoon dried sage 🍃
Salt and pepper to taste
Chopped fresh parsley for garnish 🌿
Instructions:

Preheat the oven to 375°F (190°C) 🌡️.
Cut the acorn squash in half and remove the seeds. Place the squash halves cut-side down on a baking sheet lined with parchment paper. Bake for 30-40 minutes, or until the squash is tender.
In a saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce the heat to low, cover, and simmer for 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed.
In a separate skillet, sauté the onion and garlic in a little vegetable broth or water until they are soft. Add the celery and cook until it is tender.
Mix the cooked quinoa with the sautéed vegetables. Add the dried thyme, sage, salt, and pepper.
Once the acorn squash is cooked, fill each half with the quinoa and vegetable mixture.

HELLO NOVEMBER!
Here is a delicious and comforting fall soup for a lovely week night meal...

🍲 Roasted Butternut Squash Soup 🎃

Ingredients:

1 medium butternut squash, peeled, seeded, and cubed
1 onion, chopped
2 cloves garlic, minced
4 cups vegetable broth
1 teaspoon ground cumin
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
Salt and pepper to taste
2 tablespoons olive oil
Fresh parsley or chives for garnish (optional) 🌿
Instructions:

Preheat the oven to 400°F (200°C). Place the butternut squash cubes on a baking sheet and drizzle with 1 tablespoon of olive oil. Roast for 25-30 minutes or until the squash is tender and lightly browned. 🌟

In a large pot, heat the remaining 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent. Add the minced garlic and sauté for an additional minute.

Add the roasted butternut squash to the pot along with the vegetable broth, ground cumin, cinnamon, and nutmeg. Stir well and bring to a boil. Reduce heat and let it simmer for 15-20 minutes.

Using an immersion blender or a regular blender, blend the soup until smooth and creamy. If using a regular blender, work in batches to avoid overfilling.
