Thanksgiving inspired Quinoa and Turkey Stuffed Bell Peppers:
Ingredients:
4 large bell peppers, halved and seeds removed
1 cup quinoa, rinsed
2 cups low-sodium turkey or vegetable broth
1 pound ground turkey
1 onion, finely chopped
2 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried sage
Salt and pepper to taste
Chopped fresh parsley for garnish
Instructions:
Preheat the oven to 375°F (190°C).
Quinoa: In a saucepan, bring the turkey or vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15-20 minutes, or until quinoa is cooked and liquid is absorbed.
Bell Peppers: While the quinoa is cooking, place the halved bell peppers in a baking dish, cut side up.
Turkey Mixture: In a skillet, cook the ground turkey over medium heat until browned. Add chopped onion and garlic, and sauté until the onion is translucent.
Seasoning: Mix in dried thyme, dried sage, salt, and pepper to the turkey mixture.
Combine: Once the quinoa is ready, combine it with the seasoned turkey mixture.
Stuff the Peppers: Fill each bell pepper half with the quinoa and turkey mixture.
Bake: Cover the baking dish with foil and bake for 25-30 minutes, or until the peppers are tender.
Garnish: Sprinkle chopped fresh parsley on top before serving.
