Crockpot Chicken Enchiladas
3 chicken breast
1 to 2 cans enchilada sauce depending on what you prefer
1/2 onion diced
Black olives
2 1/2 to 3 c Shredded cheddar cheese
Low carb tortilla shells cut in small strips then pieces
In crockpot place chicken and top with enchilada sauce.
Cover set on high for 4 hours.
Then add in tortilla shells that are cut.
Add onion and half of black olives and half of cheese!
Stir to combine.
Then top with remaining cheese and black olives.
Cover and cook for another 40 minutes!
Serve with toppings of your choice like
Sour cream, avocado, jalapeños or green onions. Whatever your heart desires!

Loaded Burger Bowls
INGREDIENTS
8 slices cooked bacon, crumbled
2 1/2 c. shredded cheddar
2 lb. lean ground beef
Kosher salt
Freshly ground black pepper
DIRECTIONS
1. Preheat oven to 400°. In a medium bowl, toss the bacon with the cheddar cheese.
2. Coat a 12-cup muffin tin with cooking spray.
3. Season beef with salt and pepper. Add a small handful of beef to each muffin tin, then press up the sides to create a cup.
4.Divide the bacon-and-cheese mixture evenly among the cups.
5. Roast until beef is cooked through and cheese is melted, about 15 minutes. Let cool slightly.
6. Using an offset spatula, release hamburger bowls from muffin tins.
Serve and enjoy
