The 1st day of Spring sounds like the perfect day to bake a pie that looks & smells like Spring! We baked what we are calling Lemon Blueberry Delight 😋
Crystal, the Activity Director baked a pie earlier in the day for everyone to enjoy while the other pie (Double Blueberry Delight) was in the oven. It was a hit.
This would be a great dessert for Easter and we'd love to share the recipe with you.
* 16 oz softened cream cheese
1 cup sugar
1 T vanilla
Beat those ingredients together. Fold in fruit of choice (we used fresh blueberries)
Add mixture to a graham cracker pie crust (could do in a cake pan too)
Top with your choice of Martha White muffin mix (we used one blueberry cheesecake & one lemon poppy seed)
Even out the muffin mix & add 6 T of cold pats of butter. (I suggest putting pie on a baking sheet)
Bake @ 350° for 40 minutes. Enjoy! If you happen to make it, let us know what you think!

This afternoon each the NH & AL had their Shamrock Socials. Jason; one of our wonderful Cooks made Reuben pizza & Irish Toastie pizza. Along with that, we had frosted sugar cookies, Rainbow Spritzers & Mint ice cream

AL enjoyed gathering with friends & singing Irish folk songs accompanied by Jim & Barb Dale on the piano.
And some ladies from AL were up to some Shenanigans this morning & got a little wild in the beauty shop 🤭

Niki is our Assisted Living Social Services Designee & Brittiny is our Social Services Coordinator in the Nursing Home. From taking care of admissions, planning care plans, holding council meetings, advocating, and supporting families; they are making sure everyone is receiving person centered care. Thank you both for all that you do!
