Delicious & nutritious garden veggie “bisque”. 🍜

1. Put halved peppers, tomatoes, sliced red onions and a whole garlic bulb (chop off the top) on a sheet pan. Drizzle olive oil, salt, pepper.
Bake on 400 degrees until veggies are soft (25-30min).

2. Let the veggies cool completely. Squeeze the garlic out of the shell, then add all veggies to a food processor with a can of rinsed & drained cannellini beans, fresh basil & chicken broth. Blend until smooth. Season to your liking.

I cut off the end of celery, put it in water on my window sill for several weeks, then planted it.

Delicious and filling beach lunch! 😋

From our 4th of July 🇺🇸 cookout, we had leftover grilled chicken, corn on the cob and a tomato/ basil/ mozzarella salad. Mix them together for a perfectly balanced protein, fiber-full cold salad.

Since it is Greek Festival season 🇬🇷, I tried out a new recipe using this cool new pan. These Chicken Gyros are so easy and delicious! Two baseball games tonight and we still were all able to eat a good dinner.

Marinate skinless, boneless chicken thighs OVERNIGHT with lemon, fresh garlic, Greek yogurt, salt, oregano & paprika. Layer on this skewer pan and bake on 425 for about 30 minutes. Baste a few times during cooking.
Shave off chicken into warm gyro bread, add diced tomato and onion and a dollop of Tzatziki (I did homemade but it’s just as easy to buy).
It’s delish!

Oh and if you go to one of the awesome Greek festivals this summer, gyro is pronounced “YEAR-O”. 🤣

lt has been incredible to watch how insulin, injection & blood sugar monitoring devices have evolved over the last 20+ years since I’ve been in practice. # SCIENCE

In 1922, at the University of Toronto, scientists went to a hospital ward with children who were comatose and dying from diabetic keto-acidosis. Imagine a room full of parents sitting at the bedside waiting for the inevitable death of their child. The scientists went from bed to bed and injected the children with the new purified extract - insulin. As they began to inject the last comatose child, the first child injected began to awaken. One by one, all of the children awoke from their diabetic comas. A room of death and gloom, became a place of joy and hope.

This is a delicious Costco find!

I teach clients that healthy eating takes a little extra time & effort. “Convenience foods” are often lower in nutrition and higher in additives than home cooking.

However, this is a great find for those mornings that you just need to get out the door. It was delicious and kept me full for hours. I found it in the Costco freezer.

Chicken Marsala- add this recipe to your quick & easy weeknight meal folder! (Recipe below).
This would go great over wild rice. I used baby bella mushrooms because that’s what I had on hand.

Nutrition in this meal:
You will obviously get lean protein from the chicken breast and healthy fat from the olive oil.
