Delicious & nutritious garden veggie “bisque”. 🍜
1. Put halved peppers, tomatoes, sliced red onions and a whole garlic bulb (chop off the top) on a sheet pan. Drizzle olive oil, salt, pepper.
Bake on 400 degrees until veggies are soft (25-30min).
2. Let the veggies cool completely. Squeeze the garlic out of the shell, then add all veggies to a food processor with a can of rinsed & drained cannellini beans, fresh basil & chicken broth. Blend until smooth. Season to your liking.
