Soup’s on! This is my adapted keto copycat OG Zuppa Tuscana…that’s a mouthful 😬 Subbed steamed cauliflower for potatoes and added some chicken which isn’t in the OG version (just because I had some leftover rotisserie chicken). Was it delicious? Kale yes it was! 🤪

Back to the basics today! Egg roll in a bowl was one of my go-tos when I first started eating low carb almost 6 years ago, and it had been way too long since I had it so I had to rectify that today! I put my own twist on it by adding sriracha and cashews 😋

Been craving an Italian sub so here’s my low-carb twist on it. Ham, salami, pepperoni, provolone, lettuce, tomato, and homemade Italian dressing (store bought usually has added sugar) on a Trader Joe's cauliflower pizza thin. And of course I had to have my beloved fried turnips, this time Parmesan garlic 😋

Sure, a grilled steak is good, but have you ever had one done via sous vide and finished in a cast iron skillet?! Next. Level. 🤤 2 hours @ 125° then seared about a minute per side = the perfect medium rare steak. Garlic “bread” is cloud bread from Aldi.

I don’t even know what to call this dish, other than delicious 🤤 Spicy southwest hash? Layered bowl? It’s fried turnips (you can barely tell they’re not potatoes! Way lower in carbs though 😃), onions, red pepper, and tomatoes, scrambled eggs, chorizo, cheese, and topped with sour cream and guacamole. Just what I needed to warm up on this cold day! 🥶
