Back again! Our pay what you can lunch series — hosted by our RD here in Delmar.

Pay what you can and we donate 100% of the profits. This week we will offer a Radicchio Salad and Chocolate Chip Almond Butter Cookie Dough Balls.

INGREDIENTS — SALAD:
radicchio
white beans
endive
brussels sprouts or cabbage (whatever is available)
walnuts
pomegranate
green apple
olive oil
fresh squeezed orange juice
lemon juice
maple syrup
dijon mustard
toasted sesame oil
h**p seeds
goat cheese (can also use dairy-free cheese of choice—I will make half of the meals that do not have goat cheese on them)

Cookie dough balls:
coconut flour
almond butter
dairy-free milk (coconut, soy, almond or rice milk)
maple syrup
chocolate chips (opting for dairy-free dark chocolate chips)
