Alright ya'll...this is hands down THE BEST gluten free/vegan muffin I have ever tried. In fact...probably one of the best muffins I have ever had, period.
My mom and I had some fun making them together, loosely based on one of 's recipes. I am going to share our variation and I hope some of you try these because WHAT THE HECK I was not prepared for how delish they are (pro tip: better the second day π)
*I want to preface this by saying that w/ 3 party household, and one of those people being a very hungry worker of long hours, I tend to make a lot of food when I cook & bake, so this recipe is scaled to make 12 muffins*
π«1.5 cups GF flour blend (I used a combo of rice, chickpea, and quinoa flours)
π«3 tsp cinnamon, plus whatever other yummy spices you want!
π«1.5 tsp EACH of baking soda & baking powder
π«1 tsp sea salt
π«1.5 cups applesauce (I only had about a cup of storebought, so I fine diced an apple, simmered it w/ water and spices on the stove, and then blended to make up the rest!)
π«heaping 1/4 cup melted coconut oil
π«3 tsp vanilla extract
π«3 Tbs plant milk (we actually used watered down yogurt π)
π« 1/3 cup coconut sugar
π«2.5 tsp vinegar
π«generous helping of blueberries (or whatever mix ins you feel like adding π)
Mix is simple: combine all dry ingredients in one bowl, all wet ingredients in a other bowl, and then add them together before finally adding your blueberries or other mix ins!
Optional (but highly recommended!!!!) topping: blend of oats, spices, coconut sugar, rough ground almonds, salt, and some leftover granola. Moistened w/ coconut oil and sprinkled on top generously before baking.
Bake at 350Β° for about 20 min!
You probs won't be able to resist trying them right away, but they really do somehow get better the next day π
..Someday, I'll invest in some proper food photography tools, but today is not that day...
