🍵Quick 5 day meal prep idea 💡
Ingredients:
2/3 large sweet potatoes
2 blocks of extra firm tofu pressed
1/4 c coconut aminos
1/4 c water
12oz green beans
4 garlic cloves
🧂Seasoning to taste (season it how you like honey).
Instructions
✨Wash potatoes & green beans thoroughly. Pat to dry with a clean cloth.
✨place tofu in at tofu press OR wrap each block in a clean cloth, place on a flat surfaces like a plate and add a flat surface on top (like a small cutting board or another plate) place something weighted on top (canned goods) and let sit for about 10 mins.
✨Half the sweet potatoes lengthwise and place face down on a baking sheet
✨ bake sweet potatoes at 400 for 20 mins or until tender
While potatoes are baking…
✨ mix the coconut aminos with 1/4 c water and add seasonings to taste. I used paprika, salt, pepper, and a dash of low sodium soy sauce.
✨ slice the tofu blocks into 3 medium sized blocks each (you should have 6 pieces total)
✨ place the tofu into the coconut amino mixture. Make sure it’s completely covered in the marinade and let the tofu sit about 5 mins before placing them on to a baking sheet and into the oven for about 10 mins
Remove the sweet potatoes to cool
✨in a pan (on medium heat) add a drizzle of olive oil and minced garlic
✨ stir till fragrant and add the green beans gently mixing until all is incorporated
✨ turn the heat to low and cover with a lid
✨remove the tofu from the oven
✨ slice sweet potatoes and tofu
✨ place equal amounts into your meal prep container
Yes there is an extra slice of tofu… that’s your lunch today on a bed of mixed greens with your choice of veggies (your welcome 😂)
