When I make this organic arugula and kale salad I typically eat it right out of the bowl it was made in.
Ingredients:
Lacinato Kale (aka Dino or Tuscan)
Arugula (aka Rocket/Roquette)
Olive Oil (high quality)
Lemon Juice (usually 1 or 2 lemons, depending on amount of greens)
Salt (I use Himalayan, avoid iodized/table salt)
Directions:
1. Check your mental/physical state, create a space where you feel as much joy and love as possible before you begin. If you’re feeling disconnected, sad, frustrated, angry, etc. … acknowledge those feelings with more love, compassion, and non-judgement, awareness is the first step in order to shift your state, to reset try to take a few deep breaths, get outside, take a shower, or even turn on a song you love and dance it out for a couple minutes.
2. Massage Kale with Olive Oil until leaves are coated and soften slightly (they will have an oily sheen to them), the amount of oil will depend based on the amount of greens you are using, start with a splash and add more as needed
3. Add Arugula and mix, you may need to add a bit more olive oil
4. Add Lemon and Salt to taste
Variations:
- try it with any variety of lettuce
suggestions: romaine, or just arugula, or just kale (leafy kale works too)
- add freshly grated parmesan
- add roasted veggies
- serve with an ancient grain like quinoa
- add grilled or roasted chicken (or meat of your choice)
