I'm not on here much since social media is not my thing, so thought I'd do an "About Me" post and pin it so the social media world knows I'm still around!

Hi! I'm Jen, sports dietitian and owner of Active Fueling Nutrition Coaching. I help athletes and active individuals optimize their nutrition with individualized online nutrition coaching.
*
In addition to sports nutrition, I specialize in disordered eating and have worked in that field for well over a decade. I believe it's so important that we maintain/build a healthy relationship with food and our bodies while working on our health, performance, and nutrition goals.
*
On the personal side, I used to consider myself an endurance athlete and have participated in many running and cycling races/events, but now that I'm a mom to two little girls (and one furry doggie) I exercise mostly for enjoyment and to stay healthy and strong. I don't race much but I'm still out there running and cycling and I now prioritize lifting heavy things as well!
*

Haven't been on Insta much lately (what's new! 😂) but wanted to pop in to share a mom meal victory!

It's not easy finding a meal that the whole family will eat, so when my kindergartener gobbles it down I figure it's good enough to share!
*
I call these "deconstructed shish kebabs". It's a super easy one sheet meal.
*
Chicken 🍗
Bell pepper 🫑
Onion 🧅
Pineapple chunks 🍍
Marinade (I used Pei Wei Beijing sauce but Teriyaki also works well)
Bit of avocado oil for the veggies

Dice veggies and chicken, toss in sauce and roast in the oven at 375 degrees for 20-25 minutes, or until chicken is cooked through and veggies are tender.
*
I did roasted sweet potatoes on the side but rice would also go well.
*
Enjoy!

I always like to give a friendly reminder this time of year that hydration is just as important during the winter as it is during the summer!
*
In fact, the cold dry air causes you to lose MORE fluids through respiration. And if you overdress and end up sweaty that further dehydrates you. 🥵
*
So, even if you don't feel as thirsty, please don't forget to hydrate during winter sports! If you aren't feeling it in the cold, try warm liquids such as tea, broths, or even sports drinks like apple cider flavor.

Mom win: when you make a dinner so yummy everyone in your family goes for seconds and there are barely any leftovers! 🎉

This pasta recipe is super easy and has been one of my go to's lately. Bonus: it can be served warm or cold!
*
Jen's Pasta Salad:
1 box Banza chickpea pasta
1 can chickpeas
1 package mozzarella pearls
Handful of chopped spinach
small jar sun dried tomatoes
small jar artichoke hearts
1 bell pepper, diced (I use yellow since there are already green and red veggies in this dish)
Feel free to add other veggies such as onions and olives!

Cook pasta, then add all other ingredients and enjoy!

Been doing all the fall things lately, i.e. trail runs in the leaves and baking and cooking with pumpkin and other fall flavors! 🍂🍁🏃‍♀️🎃

I'm a big fan of pumpkin muffins, and am always checking out new recipes. Here's the latest one I tried, courtesy of "jar of lemons":

-3/4 cup cottage cheese
-1/3 cup maple syrup
-1 tsp vanilla extract
-1/3 cup pumpkin puree
-2 large eggs
-1 1/2 cup all purpose flour
-1 1/2 tsp baking powder
-2 teaspoons pumpkin spice
1/4 tsp salt
1/2 cup chocolate chips

Preheat the oven to 350 degrees F.
Combine the cottage cheese, maple syrup, vanilla, pumpkin puree, and eggs in a blender.
Blend until smooth.
Mix it with the flour, baking powder, pumpkin spice, and salt in a large mixing bowl (or lightly blend in the dry ingredients).
Fold in the chocolate chips.
Pour the batter into a muffin tin with liners.
Bake for 25-30 minutes.
Let cool for a few minutes and enjoy!

I haven't been doing many posts lately (it's just not my thing, even when I do have time, as much as I try to make it be!).

So I thought maybe it's time for an "about me" post! 😊
*
I'm Jen, owner and sole dietitian at Active Fueling Nutrition Coaching. I do online nutrition coaching and I am based out of Colorado.
*
Trail running, cycling, and skiing are my favorite sports. Prior to having kids I used to race a lot (mostly running, some cycling) but now I mostly do it for fun and throw in the occasional race.
*
I have 2 little girls, a dog, and a husband so life outside of work is busy!
*
It's also important to note that I'm a huge Disney fan, particularly Disneyland! I even have some Disney decor tastefully placed in my home (see pic). I prefer trails over roads, but if I ever decide to do a road marathon you can bet it will be the Disney World one!
*
My nutrition philosophy is that all foods fit! Sure some foods may be more productive to your goals than others, but nothing is off limits. I believe it's important to make nutrition changes sustainable, and part of that is allowing foods you love that maybe aren't as nutrient dense as others. It's all about balance!

Did my longest race this weekend since Sept 2021 (pre 2nd baby)- The Arrowhead Half marathon! 🎉

Overall I'm super happy with how it went. I felt strong, I fueled pretty well, and I ended up 3rd place in my age group which won me a free bag of hydration mix!
*
On the course I fueled with Skratch hydration and gummies. I didn't end up eating as many gummies as planned as I was having some post nasal drip (silly allergies) that were bothering my stomach the last few miles. 😬
*
During the race I was reminded how bad I am at math while running, and wasn't sure if I was eating enough. I knew I needed a half pack of gummies per hour, but failed to count how many gummies that meant 🤣Getting back to race mode was an adjustment for sure!
*
I Celebrated a successful race with my go to protein shake and the donuts that were offered at the after party. 🍩 Then plenty of carbs and balanced meals as the day went on.
*
I feel like I recovered well, and can't wait for the next one! 🏃‍♀️🎉💪🏼

This post might look like a lowly container of oats, but it represents so much more!

This is the first time I've prepped overnight oats for myself in well over a year! 😮🎉
*
I really don't enjoy hot oatmeal during the summer, but cold I don't mind. Plus the convenience of just grabbing it out of the fridge ready to eat is great. However, I REALLY struggle with motivation to prep it the night before.😬
*
As a mom, I'm pretty worn out by the time I get the kids to bed, and prepping food for myself is the last thing I want to do. I'd prefer to sit and stare like a zombie!🧟‍♀️
*
But, I finally decided that the effort was worth it. Why? Because I know getting in a full breakfast is important but I've been struggling to get the right size breakfast in, which results in me getting overly hungry (and grumpy) later in the morning or not starting my runs as well fueled as I need to.
*
So I reminded myself of why it was important to do the meal prep the night before no matter how tired I am, gave myself a pep talk and did it! And guess what, it wasn't as hard as I imagined it to be.
*
Nutrition changes are hard. It helps to have a plan or intention and to remind yourself of the importance of doing it, despite the set backs.
*

That's why I packed myself a whole peanut butter, Nutella, and banana sandwich for my between clients afternoon snack today!
*
Yes that immediate post workout recovery meal or snack is important, but so is what you eat the rest of the day!
*
It's easy to under fuel unintentionally on a big workout day. Your body will be recovering for hours (maybe even days) so fuel it regularly and well! It's ok if your "snack" looks like someone else's meal.
*

Yesterday I did a bigger climb on my run than usual (3300ft gain in an 8.4 mile run, and 2.7 of those miles were downhill!) 🏃‍♀️⛰️🥵

Big workouts like that require extra attention to your fueling if you want to fuel and perform your best!
*
Here's what my nutrition looked like (SWIPE ➡️)
*
Pre run breakfast was instant oatmeal with seeds and a banana 🍌 about 1.5 hours before the run started (gotta have a convenient breakfast when getting kids ready for school!)
*
During the run I fueled with hydration mix and energy chews. When I'm pushing hard uphill I just can't do solid foods so sports nutrition products work well for me.
*
My immediate post run recovery snack was a protein shake and a fig bar. Since I was running at ski resort and had to take a gondola down and drive home I needed something convenient!
*
Shortly after the post run snack, I ate my lunch which was a giant sandwich from a local shop ...Well 3/4 of a giant sandwich as my dog snuck in the last 1/4 of it when I got temporarily distracted 🤣😢😬🐶
*
Was it perfect? Probably not but it was close to my targets and I felt good during the run and recovered well after! 💪🏼🎉
