Pumpkin cheesecake mousse πŸ§‘πŸ’›πŸ€

…when your oven is broken but you were asked to bring a dessert πŸ˜‹πŸ‘πŸΌ

I tend to measure by look and taste, but here’s my estimated recipe:

1 lb cream cheese
8oz pumpkin purΓ©e
1/2 cup powdered sugar
1/2 tsp pumpkin spice seasoning
(cinnamon, nutmeg, ginger and clove)

- Blend the above ingredients together
- Then gently fold the whipped cream into the pumpkin mixture.

~16oz whipped cream
(Heavy cream, powdered sugar and a dash of vanilla)

Crushed gingerbread cookies for the bottom.
Piped mousse into cups/containers.
Topped with remaining whipped cream, and devour πŸ™ŒπŸΌ

One of my favorite ways to use any leftover corn on the cob.

The following ingredients were measured with love: leftover corn, butter, lime juice, sour cream, cojita cheese, garlic, chili powder, paprika, cayenne, and salt.
