Playing around with cooking eggs today. For the longest time, I have been softboiling them in my little Cuisinart Egg Streamer. Today I tried something a little different and poached them in butter.
Butter Poached Soft Scramble Eggs
3 large eggs (pastured)
3 tlbs (42g) Kirkland Grass Fed Butter
a 2 cup mini pot
- Bring butter to a slight boil and remove from heat.
- Crack the eggs into the butter and return to a medium heat.
- Bring the butter back to a simmer.
- When the whites of the eggs start to solidify, use a fork and gently mix the eggs for a few seconds.
- Let butter come back to a simmer and gently mix the eggs with the fork again.
- Repeat until the eggs are cooked to desired consistency.
