POV: I’m the girl who gave up gluten for a whole decade, but just crushed 9 days of nonstop Italian pasta, pizza, and bread. No bloat. No regret. No bathroom sprints. No “why did I do this to myself” - just feeling phenomenal every day.
Here are the things I learned.
1. My “gluten” issue was probably an American wheat and production problem, not gluten itself. After 10 years of avoidance, I went full carb mode overseas and felt… fine? Great, even. US wheat is often modern hard red varieties bred for high gluten and yield. Italians tend to use softer wheats, ancient strains, and durum semolina for pasta. The gluten structure is less aggressive for a lot of sensitive ppl like me!
2. Italian flour digests different (and it’s not just rumor!) Tipo 00/0 flours are super finely milled but from grains with lower protein/gluten punch than US all-purpose. No yucky bleaching, no bromating, no weird enzymes or conditioners. Wayyyyy less if any glyphosate residue thanks to strict EU food rules. No angry immune system from the poison = happy gut!
3. Long, slow fermentation is the real MVP. Sourdough starters (pasta madre), long rises, and traditional methods break down a tonnnn of those tricky gluten proteins and FODMAPs before they hit the plate. American grocery store bread? Often rushed with commercial yeast. It’s like comparing a dry aged filet to microwaved hamburger. Enough said 👌
4. Pasta-making rituals > ours in the US. Real Italian dried pasta uses cold water + slow extrusion through bronze dies, then low-temp drying for dayyyyysss. This creates a denser, slower-digesting structure. Less “gluten dirt” (their words, not mine), better texture, and it doesn’t spike your insulin the way stuff does in the US. Fresh pasta? Even gentler. I ate it daily and my jeans still buttoned!
5. It’s not just the food either - it’s the whole Italian vibe. Eating mindfully, with actual fresh olive oil, eating many courses slowly. Consuming veggies in sauce, walking everywhere, and zero processed junk around probably helps everyone avoid over consumption too. No stress-eating McDonald’s while doom-scrolling. People live differently!
