Celebrate Father's Day a Little Differently this Year

Father's Day is fast approaching and with it comes the time to honor the men/father/grandfathers/brothers/sons/husbands in our lives. We sometimes tend to think of these holidays as marketing gimmicks for Hallmark and opportunities for super stores to peddle their holiday trinkets.

But, really, life is made more colorful and less mundane by celebrations and ceremonies, which is why people have been creating holy days since ancient times. These special days afford us the chance to honor and celebrate one another, the seasons, nature and life.

Enjoy this special recipe ~ Do you want a little more thyme with your dad?

Wild Thyme Preserved in Honey

Gather some fresh wild thyme (cultivated thyme will do just fine). Place in a glass jar and cover with warm melted honey, just enough to cover the thyme thoroughly by an inch or two. Set in a warm area and let sit for a few days to a week, until the honey takes on the flavor of thyme. You can warm the honey again and strain out the thyme, if you wish, though I prefer to leave it in. Its too messy to strain out, and its also nice, flavorful and chewy when left in the honey. Use in tea and on toast and muffins.

What makes this treat extra nice, if possible, is to bake up some muffins for your Dad and hand deliver warm muffins, Wild Thyme Honey and tea (or coffee) to enjoy together on Fatherโ€™s Day.

Hawthorn may well be the herb supreme for the heart, and a healthy heart is essential to a long and productive life. The flowers, berries, tips of branches, and leaves nourish, strengthen, and tone the heart muscle and its blood vessels. As a tonic fo the heart, it has the amazing ability to either gently stimulate or depress the heart's activity as needed.

Though often not included in the literature, Hawthorn is a wonderful remedy for the "broken heart", depression and anxiety. It is specific medicine for those who have a difficult time expressing their feelings or who suppress their emotions. Hawthorn helps the heart flower, open and be healed!

Use in the form of tea, tincture, capsules, syrup, jam or jelly! General dose is 3-4 cups of tea daily, 1 teaspoon of tincture three times daily or 2 caps three times per day.

Caution: I have found hawthorn perfectly safe to use, however, if you are on heart medication, it is always encouraged to check with your health care practitioner first.

Curry Blend

๐Ÿƒ1 part Coriander
๐Ÿƒยผ part Pepper

Isn't HerbDay every day? ๐Ÿ˜

This Saturday is a great day to celebrate our plant allies and also to celebrate all you have learned!

A few ideas:

Parsley is the Herb of the Year! Here is a recipe Rosemary loves:

Green Cheese

(Herbs used: Parsley, Chives, Basil, Thyme, and Garlic)

To 1 lb. of cottage cheese or Greek Yogurt (use a thick variety of yogurt*) add the following fresh herbs finely chopped:

Parsley, Chives, Basil, Thyme, and finely chopped or pressed Garlic. Add enough herbs so that the cottage cheese is green! Then spread on everything and add to salads!

Fresh herbs are best, but dried herbs will do. Cabot Creamery, our local Vermont farmerโ€™s co-op, makes a delicious yogurt cheese that is thick and creamy but without the calories or richness of cream cheese. This โ€˜yogurt cream cheeseโ€™ goes wonderfully with herbs and makes a delicious heart healthy alternative to cream cheese spreads.

Maybe you could also:

๐ŸŒบ Take a hike in the woods which are new to you!

๐ŸŒบ Spend the day celebrating our medicinal plant friends and make herbal medicine!

๐ŸŒบ Plant seeds or work in your garden!

๐ŸŒบ Plan a ceremony to honor the land and plants around you!
