🎄✨ North Pole Peppermint Crunch Popcorn ✨🎄

Looking for an easy homemade holiday gift? This North Pole Peppermint Crunch Popcorn is sweet, crunchy, chocolatey, and full of festive M&M’s—perfect for gifting!

Ingredients:
• 1 large bag LessEvil popcorn
• 1 bag Holiday M&M’s
• 6 oz semi-sweet chocolate, melted
• 6 oz white chocolate, melted
• 1 candy cane, crushed
• Holiday sprinkles

Directions:
1. Pour popcorn into a large bowl.
2. Add Holiday M&M’s and crushed candy cane.
3. Drizzle melted semi-sweet chocolate over the popcorn.
4. Drizzle melted white chocolate on top.
5. Sprinkle with holiday sprinkles.
6. Gently toss until everything is evenly coated.
7. Spread the popcorn evenly onto a parchment-lined sheet pan.
8. Place in the refrigerator for about 20 minutes, or until the chocolate is fully set and hardened.

To Gift:
Break apart if needed, portion into clear plastic baggies, tie them up, and add a cute mini ornament or ribbon. Done! 🎁

Holiday Peanut Butter Truffles (Gluten-Free & Dairy-Free)

16 ounces of organic peanut butter (crunchy or smooth)
2 cups of organic powdered cane sugar
1 stick of Earth Balance butter
2 cups of organic gluten-free brown rice crispies
1 package of Enjoy Life semi-sweet chocolate chips
1 tablespoon pure gluten-free vanilla extract
1 tablespoon olive oil or melted extra-virgin coconut oil
Sprinkles (optional)

Combine in a large bowl: peanut butter, melted butter, powdered cane sugar, brown rice crispies, and vanilla extract. Mix everything together, then form into balls using about 1 tablespoon each. You’ll get around 32–38 balls depending on the size.

Place them on a parchment-lined sheet pan and freeze for 30 minutes, or until the balls are solid.

While they chill, melt the Enjoy Life chocolate chips with 1 tablespoon of coconut oil or olive oil.

Take the balls out of the freezer and coat each one in the melted chocolate. Place them back on parchment paper, then top with sprinkles or let them harden and drizzle extra melted chocolate over the top.

Place back in the freezer to set. Store in containers or package them up as a holiday gift.

Healing with Food

I've always been interested in learning about health and nutrition. My educational background is in nutrition, hospitality management and culinary arts. I have studied Italian cuisine and I have trained with a German pastry chef. I have also worked in 5 star restaurants and I have studied and implemented food safety standards. I have even lobbied to improve school nutrition, in Washington DC. My experience and educational background in food science, food management, food nutrition, food safety and my work as a lobbyist, has given me a solid foundation in the area of nutrition and culinary arts.

After becoming a mom, to three handsome boys, my life took me in a different direction. At age 2, my youngest son was showing signs of intestinal distress, including severe bloating. After consulting with his doctors, we were advised to try an elimination diet. Through this diet, we discovered he is unable to eat gluten in addition he has multiple food sensitivities. We also discovered a life threatening allergy to tree nuts and soy. With dietary management and alternative food choices, he is a happy and healthy child.

My middle son was showing developmental delays in the areas of speech acquisition and gross motor development. He was also developing fluid in his ears which caused him to have difficulty hearing. His doctors recommended very radical treatments, including surgery. We tried the elimination diet, again, and discovered allergies to dairy products. He also is unable to have gluten in his diet. My son shows no signs with his hearing or with his gross motor development; he has progressed very well in all areas.

My oldest son drank a soy based beverage, while we were on vacation. We quickly discovered that he had a life threatening allergy to soy-based products. After ingestion of this soy drink, he quickly developed difficulty breathing, nausea and urticaria (hives). My oldest son also, later developed seasonal and a bee sting allergy. We avoid these allergens, to the best of our ability and we monitor our son for signs of any other allergies.
