Pumpkins aren't just for Halloween.
Pumpkin seeds are a very good source of beta carotene, omega 3 protein, minerals, iron, zinc, copper and vitamin k.
Clean and roast seeds on a parchment lined baking sheet with light olive oil and sea salt 250 degrees until toasted.
Great in salads, granola, oatmeal, muffin tops and snack.
Carve, Clean, Roast, Repeat....
