Pumpkin Protein Cheesecake - If you are enjoying everything pumpkin this time of year, you must try this Pumpkin Protein Cheesecake!

Ingredients:
All ingredients should be at room temperature.
½ package Neufchâtel cheese 4oz
1 large egg whole
2 oz fat-free Greek yogurt ¼ cup
¼ cup cooked pumpkin
¼ teaspoon alcohol-free vanilla extract
2 tablespoons Whey Protein For Baking
2 packets stevia
½ teaspoon pumpkin pie spice

Directions:
1. Preheat oven to 325F (163C).
2. If you are using a 4" springform pan, line the bottom with parchment paper. Rub coconut oil around the sides (or spray with non-stick cooking spray). Wrap the bottom of the pan with aluminum foil. If you are using a ceramic ramekin, no prep is needed.
3. Mix the Neufchâtel cheese, egg, yogurt, and pumpkin until smooth.
4. Add vanilla, whey powder, stevia, and pumpkin pie spice. Mix well.
5. Pour batter into ramekin or springform.
6. Put that in a larger pan (to set up the water bath).
7. Fill larger pan with about one inch of water.
8. Bake at 325F (163C) for 15 minutes.
9. Then reduce the temperature to 200F (93C) and bake for another 20 minutes. The cake should be removed from the oven while the center is not quite firm.
10. Let cool at room temperature, then transfer to refrigerator and let cool completely.
11. Remove from pan (if using a springform), and serve. Enjoy!

Tuscan Chicken - Serve right from the skillet!

Ingredients:
2 Tbls olive oil
4 chicken breast halves
1 tsp sea salt
1 tsp fresh ground pepper
1 tsp oregano
½ tsp thyme
½ yellow onion, diced
3 cloves garlic, minced
8 oz baby bella mushrooms, sliced
1 pkg frozen artichoke hearts
½ cup sun-dried tomatoes, chopped
1 can black beans, rinsed
1 jar (15 oz) roasted red peppers
½ cup shredded Parmesan cheese

Directions:
1. Season chicken with salt & pepper. Heat olive oil in skillet and brown chicken on both sides over medium-high heat. Add onions half way through, brown slightly.
2. Add mushrooms, garlic & artichoke hearts. Stir in oregano & thyme and cook covered for 5 minutes.
3. Add remaining ingredients and allow to heat through. Sprinkle on Parmesan cheese and cover until it starts to melt.

Pumpkin Protein Cookies - These Pumpkin Protein Cookies are the perfect fall treat!

Ingredients: (at room temperature)
⅓ cup natural vanilla whey protein
1 tablespoon coconut flour
¼ cup pumpkin puree
2 teaspoons coconut sugar
⅛ teaspoon pumpkin pie spice
¼ teaspoon baking powder
1 pinch sea salt (or regular salt)
1 tablespoon chopped pecans

Directions:
1. Preheat oven to 325F (163C).
2. Except for the pecans, mix all cookie ingredients until well combined.
3. Fold in the pecans.
4. Spoon batter onto a parchment-lined cookie sheet as 4 cookies. Use the back of your spoon to help shape them.
5. Bake for 5 minutes, and check to see if they are firm. If not, continue to bake and check every 1-2 minutes. For best results, remove from oven as soon as they are firm. (Over-baked whey cookies can get very dry.)
6. Enjoy! Store in the refrigerator.

"I had to come in for a lance and drainage of a very infected cyst, and as a complicated patient with a history of bad experiences, I was extremely anxious. The last time I had this procedure, a different surgeon ignored my request and used epinephrine in the lidocaine, which caused a severe reaction. Because of that, I came in fearful of going through it again.Dr. Atwa was incredible from start to finish. Not only is he extremely knowledgeable and capable, but he has a calm, professional demeanor that immediately put me at ease. Unlike many surgeons who can feel rushed or dismissive, he took the time to listen, explain, and maintain a reassuring atmosphere throughout the procedure.His office staff was also amazing. When I called in, they were kind, understanding, and got me an appointment the very next day. Spicy Pumpkin Seeds - Recipe courtesy Bobby Flay

Ingredients:
3 cups pumpkin seeds
2 tablespoons canola oil
1 1/2 tablespoons ancho chili powder
1 tablespoon kosher salt
1 teaspoon chile de arbol powder

Directions:
• Preheat oven to 350 degrees F.
• Place the pumpkin seeds in a large bowl and toss with the oil, ancho powder, salt, and chile de arbol powder. Spread evenly on a baking sheet and bake for 8 to 10 minutes, stirring once. Let cool and store in an airtight container.
