BHK Chilled Sesame Peanut Noodle Salad
(prep time: 20 minutes, cook time: follow pasta directions, serves: 8+)
Ingredients
-16 oz pasta of choice (we used whole wheat pasta)
-1 cup peanut butter or nut butter of choice
-1 cup warm water
-¼ cup rice vinegar
-¼ cup Braggs Amino Acids or tamari or soy sauce
-2 Tbsp maple syrup or molasses (molasses preferred)
-pinch of red pepper flakes or a bit of Sriracha sauce
-pinch of ground ginger
-10 oz shredded red cabbage
-12 oz Asian slaw blend (or create a blend of white cabbage, celery, & carrots)
-8 oz snow peas cut into thirds
-1 Tbsp sesame seeds (we prefer black because you can see them)
-Garnish: peanuts or almonds, sesame seeds, fresh cilantro
Directions
1. Follow the al dente directions on your pasta box and cook the pasta accordingly. (Go to step 4 while pasta cooks)
2. Strain pasta and place in a large bowl.
3. Cover pasta with cool water, strain, and repeat until the pasta is completely cooled.
4. Prepare the peanut sauce by adding these ingredients to a blender: peanut butter,
warm water, rice vinegar, Braggs Amino Acids or tamari or soy sauce, maple syrup, red
pepper flakes or a bit of Sriracha sauce and ground ginger. Set peanut sauce aside.
5. Set aside a pinch of the shredded red cabbage, Asian slaw blend & snow peas. You’ll
use these in the end as a garnish.
6. Combine the pasta & remaining shredded red cabbage, Asian slaw blend & snow peas
in a large bowl. Toss together.
7. Just before serving, pour the peanut sauce over the pasta and vegetables and toss until thoroughly coated.
8. Sprinkle the vegetables you placed aside in step 5, the sesame seeds & peanuts (or
toppings of choice) on top of the noodles.
9. Top with fresh cilantro or serve on the side for those who may not enjoy it.
10. Serve immediately.
