🍎 November Recipe of the Month: Baked Cinnamon Apples with Oats & Walnuts
This Thanksgiving season, treat yourself to a dessert that’s both comforting and heart-healthy. These warm baked apples are filled with oats, cinnamon, and crunchy walnuts, giving you all the cozy flavors of fall without the extra sugar and calories.
🧺 Ingredients:
🔸 4 medium apples (Honeycrisp or Fuji work great)
🔸 ½ cup old-fashioned oats
🔸 ¼ cup chopped walnuts
🔸 1½ tsp ground cinnamon
🔸 1 tbsp melted butter or coconut oil
🔸 2 tbsp honey or maple syrup
🔸 Optional: a dollop of Greek yogurt for serving

🔸 1️⃣ Preheat oven to 350°F.
🔸 2️⃣ Slice the tops off the apples and carefully scoop out the cores, leaving the bottoms intact.
🔸 3️⃣ In a bowl, mix oats, walnuts, cinnamon, melted butter, and honey or maple syrup.
🔸 4️⃣ Spoon the mixture evenly into each apple.
🔸 5️⃣ Place apples in a baking dish with a little water in the bottom to prevent sticking.
🔸 6️⃣ Bake for 25–30 minutes, or until the apples are tender and the filling is golden.
🔸 7️⃣ Serve warm and add a spoonful of Greek yogurt if desired.
