BIG Life Update ❤️🌿
After 8 incredible years of coaching nutrition, I’m entering a new season — one that’s slower, simpler, and deeply rooted in faith and family.
We’ve moved to the country and are beginning to embrace the homestead life: gardening, chickens, sourdough, and more intentional time with our kids. Through it all, God has been stirring something new in me.
I’m not fully stepping away from coaching — wellness is still a huge part of who I am! You’ll still see me on occasion and I’ll continue supporting a more intimate small group of clients, along with sharing tips to help you live healthier and stronger.
✨ But my heart is also being pulled toward something new — building financial freedom while we build our homestead, and helping others do the same. I’m combining Health + Wealth to bless our family and support those who feel burnt out and ready for change.

✨ Nutrition doesn’t have to be complicated — just DELICIOUS! 😋💪
Say hello to this on-the-fly, high-protein lunch that came together in under 5 mins ⏱️🔥
🍴 What’s in it:
🍞 1 Pacha Sourdough English Muffin
🍗 4oz Pre-cooked Chicken Breast
🥑 1 Tbsp Primal Avocado Lime Dressing
🧀 1oz Dubliner Cheese
🥒 Cucumbers
🥬 Cabbage
🌶️ Jalapeño Hot Sauce
🔥 How to make it (in under 5 min!):
1️⃣ Toast your English muffin in a Wonder Oven or air fryer until lightly browned.
2️⃣ While that’s toasting, toss your pre-cooked chicken into a skillet to heat up.
3️⃣ Mix in the avocado lime dressing with the chicken while it warms.
4️⃣ Pull out the toasted muffin, top it with the chicken + cheese.
5️⃣ Pop it back in the oven/air fryer just long enough to melt the cheese.
6️⃣ Finish it off with cucumbers, cabbage, and a splash of jalapeño hot sauce 🌶️✨

Nutrition and fitness are two of my passions. I created CFE Nutrition Coaching By Elizabeth Jenkins to offer assistance to educate, encourage, and motivate anyone looking to push themselves to find their true potential.
My journey began almost 15 years ago. I was young, out of shape, and did not have a “healthy” grasp on nutrition. I started out just as a casual gym goer and eventually began to take things a little more seriously. I began competing in Women’s Figure Competitions, this is when my passion for nutrition and fitness really took off. I spent almost 8 years in the competitive world of Figure Competitions, and obtained my IFBB Pro status in November 2012. During this time, I was able to learn how nutrition played a key role in obtaining a chiseled physique. I took things a step further and obtain my Sports Nutrition Certification from ISSA. Through personal trials and experiences, I expanded my knowledge of how nutrition plays a huge role in almost any area of life. I spent 5 years working in the supplement industry where I also helped hundreds of men and women achieve fat-loss/muscle gain goals through nutrition. Over this past year I have made the transition to Crossfit and have even done a few competitions, as well as earned my Crossfit Level 1 Trainer Certificate. Through extensive research, I have found the ultimate nutrition formula to increase my performance and maintain a strong, lean physique. I recently obtained my Precision Nutrition Level 1 Nutrition Coaching certificate, this has made a huge impact on my current level of knowledge and I am extremely excited to share this with others!
