My favorite recipe to convert veggie haters & kale skeptics! It comes together really quickly, is super healthy and absolutely delicious. Post your results & reaction, if you give it a try.

Tuscan Kale and White Bean Soup Serves 4
Ingredients *
2 tablespoons extra virgin olive oil
1 cup diced yellow onion
4 large garlic cloves, roughly chopped
1 (32-ounce) vegetable broth
4 – 5 cups packed chopped kale
1 (14.5-ounce) can Italian-style diced tomatoes
2 (14.5-ounce) can cannellini beans, drained and rinsed
3 large carrots, peeled and sliced

Method
In a large saucepan, heat olive oil over medium heat. Add onion and cook 3 minutes. Add garlic and cook 2 minutes longer. Add broth, kale, tomatoes and carrots, and cover. Cook 5 minutes or until kale is tender. Add beans and heat thoroughly. Serve hot.

*Peggy’s Notes
· Try to get as many organic ingredients as possible, especially the kale. Not only is it better for you, but it tastes better too.
· The original recipe called for 1 can of beans, but I use two for added protein when the soup is the entrée. If the soup is too “thick” with vegetables, etc, just add more water and/or broth.
