NEED A HEALTHY HOLIDAY CASSEROLE OR DESSERT!!
Butternut Squash Casserole Family size
3 cups cooked mashed squash
(Reserve some of liquid cooked in)...
2 large eggs or 3 medium eggs
18 packets stevia or loose stevia to equal 3/4 cup sugar
1/2 tsp salt
1/2 stick butter softened
1 small vanilla SF pudding and pie filling ( instant or cook)
2 Tbsp French Vanilla SF coffee creamer
2 Tbsp liquid from squash (if you forget to save any just use 4 tbsp of coffee creamer)
For Topping: Ground almonds and/or walnuts. I usually use both mixed together.
Use an electric mixer and mix squash and butter first (this will cool squash before adding eggs). Add eggs and mix well.
Add rest of ingredient (except nuts) and pour into a sprayed small casserole dish. Top with ground nuts Almonds and/or walnuts
Bake at 350 for 20-30 minutes or until set
